Someone has Swifty tickets in Vienna! โ™ก (not me) But when ya girl is 0.001% listener on Spotify because she is a mega fan, I told her should be giving her tickets. But even still, is a loyal fan, AND she understands why she's not coming to Canada. It's not a big enough venue... but Lesley's not bitter... that's true swifty love. I'm just here on the side celebrating her dedication and hopefully seeing her post show in Vienna 2024. Love you! AND YES my name is Dorothea and I've never had a song, bracelet, necklace, fridge magnet, or, gas station cup with my name on it so ill appreciate her song that has my name in it!

Elote Salad is the side you must have for your next upcoming BBQ! ๐ŸŒฝ๐Ÿฅ—

Sooo simple to make and can outshine even the mains!



For the Elote Salad
4 corn on the cob shucked
1 bunch of green onion โ€“ finely chopped
ยฝ red onion โ€“ finely diced
ยฝ bunch of cilantro (or to your preference) โ€“ finely chopped
2 limes โ€“ juiced and zested
2-3 tablespoons mayonnaise
ยฝ cup crumbled Cotija/feta/goat feta cheese
Tajin to taste โ€“ (this can replace your salt)
1 teaspoon โ€“ paprika

Grill 4 corn on the cob until it has some color. Cut corn straight off the cob into a bowl. Add green onion, diced red onion, cilantro, 2 fresh limes - juiced and lime zested, 2 - 3 tablespoons of mayo, Tajin and a sprinkle of paprika. If you can find cotija cheese, then that's the preferred choice. If not, feta or goat feta in the elote salad works great too! Season with salt, mix well and keep in the fridge until ready to serve.

Happy Canada Day ๐Ÿ‡จ๐Ÿ‡ฆ

I'm so lucky to have been born in this country for MANY reasons, but to summarize:

I appreciate more than ever before its beauty, both in its it's cultural diversity and its picturesque mountains, lakes, rivers, forests, and oceans. We are lucky. My hope in the years to come is that our great country strives to be better for all its people through equality while lending a hand in helping others who are not as lucky to live in our country. That we focus on nurturing and protecting nature by being kinder to its resources while being a global advocate for other countries to do the same.

We are not perfect, but hopefully, we can learn from the past and focus on being better for the generations to come. ๐Ÿคโค๏ธ๐Ÿคโค๏ธ๐Ÿคโค๏ธ

I'm so pumped that my Easter project has come to fruision (well... almost). I'm damn near ready to launch my clothing line for foodies/chefs or any others who enjoy a good pun (or enjoy being covered in noods without being "nood" Hahah).

Most of my samples have come in so I can test sizing/quality and post wash. I'm trying to be sustainable using recycled materials but must admit, it's been challenging (especially diving head first into an unknown territory).

This is my first sample - I was pumped on the quality. Hoping ill be able to fine-tune as time goes by, but I imagine it's like the first time I picked up a camera and shot a food photo. Looking back now, I see the progression and damn near cringe at the old photos ๐Ÿคฃ.

Pretty soon, this line will be up for grabs online! ๐ŸคŒ๐Ÿซถ so watch out for my official launch ๐Ÿ™ƒ and other sneak peeks of some of the products. I have a few friends who pre-ordered ๐Ÿ˜‰ best supporters ever!

As I said in my last post, you want to be pushed outside of your level of comfort to the point of extreme vulnerability in order to learn, grow, and move forward. If you stay stagnant, you'll never get to where you want to go because good things don't come TO YOU... only YOU can make them happen.

If you're like me and can't miss out on those feel-good-foods, despite wanting to eat cleaner, then you'll be happy to know that a couple of simple swaps in ingredients can make your comfort foods healthier without skipping out on taste.

One of my favorite comfort foods is meatballs in tomato sauce, which I make with ground turkey vs. beef as a healthy alternative.

I include a delicious whipped ricotta, but they can be devoured without. Bonus - these guys freeze well for those nights you don't feel like cooking. Check out this surprisingly simple and delicious recipe! .

Crรชpes - this classic sweet version is every kids favorite for breakfast, lunch or dinner. Trust me when I say when our 8 year old who won't eat anything will devour 5 in one sitting. The funny thing is, it has the same ingredients (sans baking powder/soda) as pancakes but for some reason, filling crepes with fruit, yogurt, whip cream, Nutella or syrup (sometimes all) is way better. I never measure my recipe but I have given yall a list below

Ingredients

- Approx 2 cups of AP flour
- Pinch of salt
- 4 to 5 Eggs depending on size
- 2 - 2 1/2 cups of Milk or milk alternative
- 1 tablespoon of vanilla extract (less if you want them less sweet)
- 5 - 6 tablespoons of unsalted butter - melted

The key is the texture of your batter. It should be nice and thin.

Troubleshooting:

My batter is sticking - add a small amount of vegetable oil or another egg (if you only added 4).

My crepe is dark - turn your stove top down. Every stove is different so play around with the heat. Each Crรชpe should take about 2 mins to make. Of its dark brown in spots, you're either leaving it on too long or your stove top is too hot.

My batter is still too thick - add some water or milk to thin it out.

My batters too thin - add some flour (1/4 tp 1/2 cup) to a bowl and slowly whisk your thin batter into it. Start from there.
