The 30th of every month is 'Miso Day'.
It was established in 1982 by the National Federation of Miso Industry Cooperative Associations, whose purpose is to promote and develop traditional Japanese food culture. That was 40 years ago. The date is derived from the Japanese word for the last day of the month, "Misoka". So December 31st, the last day of the year, is called "O-misoka".
There are various theories about the origin of miso, such as the introduction of its shoyu by a Japanese envoy to the Tang dynasty, or its origin in Japan between the Jomon and Yayoi periods, but it has truly been the soul food of the Japanese people since ancient times.

Tomato Salad with Sesame sauce (Gomadare)
Ingredients for two servings
✅ 2 tomatoes
✅ 5 Shiso leaves (an herb in the mint family)
A
✅ 2 tablespoons of White Sesame seed paste
✅ 1 tablespoon of soy milk
✅ 1 teaspoon of light soy sauce
✅ 1 teaspoon of sugar
✅ 1 teaspoon of vinegar
Instructions
1 Peeling the skin off tomatoes in hot water.
2 Cut tomatoes into 8 pieces
3 Wash Shiso leaves, and cut into fine strips
4 Mix all ingredients A in a bowl
5 Serve tomatoes on a plate and pour 4 (Sesame sauce), leaves on tomatoes.
Stir-fried mushrooms (Maitake) and pork with spicy sauce
Ingredients for four servings
✅ 2 pack (7 oz) of Maitake mushroom (Hen of the woods mushroom)
✅ 1 Tablespoon of potato starch
✅ 1 bottle of Maruhon 100% pure Untoasted sesame oil ( 5.5oz)
✅ 1 Garlic (1/2 oz)
✅ 1 Ginger (1/2 oz)
✅ 2 Tablespoon of Maruhon 100% Pure Toasted sesame oil
✅ 150g (5 1/2 oz) Ground pork
✅ 2 Teaspoons of doubanjiang (Chinese broad bean chili paste)

✅ 1.5 Tablespoons of Soy sauce
✅ 2 Tablespoons of Sake
✅ Pinch of Salt
✅ 4/5 cup (200ml) of Chicken Broth
✅ 1 Tablespoon of Maruhon 100% pure Toasted Sesame oil
✅ 1 Tablespoon of Potato starch with water
✅ 1 Stalk of scallion (green onion)
✅ 1 Teaspoon of Tianmenjiang (Sweetened Soybean Paste)
✅ 1 Sudachi (citrus fruit)
Instructions (cooking time: 20 min)
1. Loosen the Maitake mushrooms into bite-size pieces, sprinkle with starch.
2. Add Maruhon 100% pure sesame oil into a pan and heat up to 330°F, and fry Maitake mushrooms.
3 . Chop the garlic and ginger.
4. Heat Maruhon 100% pure Toasted sesame oil in a pan, stir-fry 3 over low heat to add the aroma. Then add ground pork and stir-fry well, add doubanjiang and stir-fry more.
5. Add A to 4, cook slowly over low heat, and finally add the mushrooms. Then add starch with water and adding Maruhon 100% pure Toasted sesame oil.
6. Place 4 on a plate and add the green onion and sudachi.

Ingredients for four servings
✅ 5.2 oz (150g)of Lotus root
✅ 3 Shiitake Mushrooms
✅ 1oz (30g) of Carrot
✅ 1 Tablespoon (10g) of Ginger
✅ 2 Tablespoon of Potato starch
✅ 3.5oz (100g) of ground chicken
✅ 3.5 oz of (100g) of ground pork
✅ 1/2 of Egg
A
✅ 2 teaspoon of Soy sauce
✅ 2 teaspoon of Sugar
✅ 2 teaspoon of Sake
✅ 2 teaspoon of Maruhon Toasted Sesame Oil
✅ 1 teaspoon of Maruhon Untoasted Sesame Oil
✅ 1 teaspoon of Grated Daikon Radish
✅ 1/2 teaspoon of Soy sauce.
Instructions (cooking time: 25 min)
1 Grate the lotus root and lightly drain. Chop the Shiitake mushrooms, carrots, and ginger and sprinkle with starch.
2 In a bowl, mix well with ground chicken, ground pork, eggs. Mix A with 1 together, and shape into bite-sized pieces.
3 Heat the Maruhon Untoasted Sesame Oil in a frying pan, bake 2 over medium heat and turn over. Reduce the heat to low and bake slowly so that the food is cooked through.
4 Add 3 to a plate and add grated radish and soy sauce.

⭐ Sweet potato and nuts with sesame oil ⭐
Ingredients for four servings
✅ 400g (4 Medium sizes) of Sweet potato
✅ 20g (15) of Cashew Nuts
✅ 20g (11) of walnuts
✅ Pinch of Parsley
✅ 30ml (2 tablespoons) of Maruhon 100 pure Toasted sesame oil
✅ 30g (1 oz) of Dried Shrimp
✅ 20g (2 tablespoons) of Almond slices
✅ 5g (2 teaspoons) of White sesame seeds
✅ Pinch of salt
✅ pinch of Ichimi-togarashi (Japanese Chili pepper)
✅ Italian parsley (suitable)
Instructions (cooking time: 25 min)
1 Cut the sweet potatoes into 1/2 inch thicknesses and steam them in a steamer for about 8-10 minutes.
2 Cut the cashew nuts and walnuts into small slices.
3 Chop the parsley.
4 Add Maruhon 100% Pure Toasted sesame oil into a frying pan and heat, then add dried shrimps. Once you can smell the roasted aroma, add the sweet potatoes and bake.
5 Before sweet potato gets brown color, add almond slices and white sesame seeds. Then bake till they become crunch.
6 Place 5 on the plate and sprinkle with chopped parsley and Italian parsley

New Recipe: Crispy Deep-fried burdock (Gobo) salad
Ingredients for four servings
✅ 1 bunch of Mizuna (Potherb Mustard)
✅ 1 bunch of Arugula (1 oz)
✅ 4 pieces of Radish
✅ 1 Burdock (Gobo)
✅ 1 bottle of Maruhon 100% Pure Untoasted sesame oil 5.5oz
✅ 1 Mackerel pike
✅ 1/4 Teaspoon of Sake
✅ 1/4 teaspoon of Soy sauce
✅ 1/4 teaspoons of Ginger juice
✅ 2 tablespoon of Potato starch
Dressing
✅ 100ml (7 tablespoons) of Maruhon 100% Pure Untoasted sesame oil
✅ 20ml (4 teaspoons) of Lemon Juice
✅ 1 Tablespoon of soy sauce
✅ 1 Teaspoon of Sugar
✅ 2 Tablespoons of Sesame seed paste
✅ 1/4 Teaspoon of YUZU Juice (Japanese citrus fruit)
Instructions (cooking time: 25 min)
1 Mizuna and arugula are washed well, then cut into bite-sized. Cut radish into thinly sliced and soaked in water.
2 Cut the burdock thinly and long with a peeler, soaked it in water, remove the harsh taste, then drain.
3 Add Maruhon 100% pure sesame oil into a pan and heat up to 330°F, and fry the burdock thin slices till colored tourn brown and crunch.
3 Cut Mackerel pike into three pieces, then cut into thin pieces, sprinkled sake, soy sauce, and ginger juice. Then cover with starch and fry.
4 Put all dressing ingredients in a bowl and mix it.
5 Serve the vegetables (Mizuna, arugula, radish) and Fried Mackerel pike, place the deep-fried burdock on top, and add the dressing.

4 After smoke rises, put 3 on top of gridiron in the pot and put a lid on the pot for 2 minutes. ⏲️
5 Then, turn the heat to low and cook for 5 minutes. ⏲️
*Add this smoky sesame to steamed potatoes and melted cheese. It goes well with wine. 🍷

Ingredients
✅ 80g (1/3 cup) of vodka
✅ Orange peels of 4 oranges (about 36g=1.3oz)
✅ 36g (1/8cup) of orange squeezed juice
✅ 330g (11FL oz.) of Maruhon untoasted sesame oil
Two bottles of 5.5 oz. Maruhon untoasted sesame oil
📜Instructions📜
1 Wash the skin of the orange well and dry it well with a cloth.🍊
2 Remove the skin from the orange with a sharp peeler or knife.🍊
3 Once the skin is well chopped, put it in the glass jar and add squeezed fresh orange juice and vodka.
4 Next day, mix 3 Untoasted sesame oil with 3, then warm it in hot water for one hour to allow the alcohol to evaporate.
5 Filter two times.
*You can cook sautéed mushrooms with orange flavor oil and chilling in the refrigerator and marinated. It is a great summer appetizer, goes with white wine.

Servings for Two
✅ 1 ear of corn
✅ 100g of Edamame (2/3 cup of Edamame)
✅ A sprinkling of flour
✅ A pinch of salt
✅ 1 1/2 cup of Maruhon Untoasted sesame oil
(2 bottles of 5.5oz)
✅ 1 Citrus Sudachi (Lime)

✅ 1 of Egg York
✅ 150cc of water
✅ 100g of flour
Instructions:
1. Cut corn off the corn uses a sharp chef’s knife to slice downward.
2. Mix corn and Edamame in a bowl and sprinkle with flour.
3. Mix all ingredients A and add to step 1.
4. Pour Untoasted sesame oil into a saucepan or pot until the oil is two inches deep. Heat over medium-high heat until oil is 340 degrees.
5. Set aside a baking sheet with a rack lined with paper towels. Take a scoop of 2 with a large spoon of the corn and edamame and slip into the oil.
6. Deep-fry until lightly browned on both sides, then put on a baking sheet.
7. Serve it with salt and Sudachi (lime) on a plate.
