Nommy Mommy
A simple mom on a mission to make people healthier, and think harder about what they eat everyday. It’s not easy with a family.
Healthy living starts with what goes into your body on a regular day to day basis. Trying to stick to a balanced diet can be tough. I work hard to make well balanced meals, that are also affordable for the everyday person. Focusing on easy to do ideas… I do a little bit of everything meal wise. I do a mix of vegan meals, pescatarian and meats. I try hard to ensure all my meals include a fresh vegg

Excited to make this this Christmas time!
I don't know who the credit should go to for inventing these, but this Christmas Tree Teepee is so much fun! What kid wouldn't love hiding out in there?! My youngest used to beg us to let him sleep under the Christmas tree every year.
This turned out amazing but instead of water I added fresh squeezed tangerine 🍊 juice and before I juiced them I zested them. My whole skill was like yum!!! Even my sensory picky 12 year old lol 😂

How to make epic seasoned eggs. You ever been to a an awesome Ramen place? They have to tasty little seasoned eggs with the undercooked squishy middle. They were so good I wanted to make my own. These are awesome. I had friends asking for the recipe.
All you have to do is combine the following ingredients for your marinade.
One cup of soy sauce
3/4 water
4-5 garlic cloves mashed
1 shallot diced fine
Lemon zest
Juice of one lemon
Juice of one lime
2 Tbs sesame seeds
2 Tbs Toasted Sesame oil
2 Tbs brown sugar
Mix all ingredients well
For eggs
Get your water boiling, add 1/3 cup vinegar (any kind, I use red wine vinegar)
Add a tsp of salt
Once your water is at a rolling boil. Carefully spoon your eggs into the hot water.
Time for six minutes and removed immediately
Place all eggs in ICE cold water
Wait at least ten minutes
Take a spoon and carefully tap the shell and remove, it should come off rather easy, but be careful, the yolk inside is not completely solid so you don’t want the white to break through
Once peeled just add eggs to marinade, you can leave them overnight or a couple of days is even better…
Add to any Ramen soup, or a salad, or enjoy on top of a stir fry.

What’s for dinner? Spicy 🌶 andouille sausage and Hebrew national hotdogs (for the kids)… baked beans, roasted red potatoes, and steamed cabbage… yummers
For roasted potatoes, preheat oven at 425, cut up small red potatoes, toss w olive oil, course sea salt, pepper (garlic salt or rosemary) place in flat tray lined w foil or parchment. Cook for 30 min or till slightly crispy.
For cabbage, cut up into small wedges. Place in a pot w water on the bottom, steamer basket in the pot, sprinkle regular salt, pepper and top w butter or olive oil amd steam for 20-25 min…
For sausage cut up and sauté w coconut oil or butter in each side till browned…
Hotdogs can be grilled for 7-8 min or boiled…
Beans come in a can lolol. Just heat them up…
Black bean patty sliders. Using Dr.Praegers, cut into halves or quarters, and natures own brioche rolls. Topped with cilantro, avacado and tomato, w a squeeze of lime, and Mayo. Delish! Coupled w fresh mango w a little chilli lime seasoning…
This truly turned out! Recipe and revised marinade underneath. Cooked the marinated tempeh on parchment paper in the preheated oven at 375 for 12 min then flipped and cooked another 12 min…
I never made this stuff but I marinated overnight in a homemade vegan tandori sauce… It was amazing! I doubled the sauce recipe and I’m glad I did! Cause it tasted amazing drizzled over some jasmine rice…
Revisions on sauce… I added two extra sooons of maple syrup and minimized the amount of cayenne and turmeric simply cause my kids cannot do that kinda heat. I only did half amounts of the tumeric and an 1/8 tsp cayenne… the heat was good. A little spicy heat but fine for the kids.
I also steamed the tempeh for 10-15 min as I read on another food blogger it helps the tempeh absorb the marinade flavor better. So steam it before marinating.
I was able to locate the Garam masala spice mix at a Fresh Market.

Trying out a Tandori style Tempeh… I’ve never made this stuff but I’m gonna marinate overnight in a homemade vegan tandori saice… I’m not sure if it’ll be good. If it is I’ll share the recipe… the sauce/marinade tasted great… so here’s hoping… here’s the recipe I used… I added two extra sooons of maple syrup and minimized the amount of cayenne and turmeric simply cause my kids cannot do that kinda heat. I did double the marinade recipe but only did half amounts of the tumeric and an 1/8 tsp cayenne…

Simple concepts, hyped up Greek salad. Romain lettuce base, w cucumbers, cherry tomatoes, red onion banana peppers, and Feta, dressed with red wine vinegar, olive oil salt pepper and dried oregano flakes.
Yummy side ideas fir the family. My kids actually ate these! But I made separate ones without the onions for them lol… you can make these in the oven at 425 for 15-20 min on the grill (for best flavor) 15-20 min or in a electric grill. Zucchini, squash, onions, red bell pepper, baby tomatoes with a little olive oil brushed on and sprinkled with salt pepper and oregano 🌿
Neapolitan style cake with a layer of chocolate w chocolate frosting sandwiched and them a layer of strawberry cake w strawberry frosting in between that and vanilla and smotherd in a decadent brien sugar vanilla cream cheese frosting I stole and added extra vanilla, did not add milk. Recipe for frosting in photos.
These are so stinking good I buy them now even when I don’t have a sore throat
Simple summer dessert. Peaches, melt some butter, add cinnamon, a few drops of vanilla mix and brush on peaches, sprinkle some brown sugar on top, cook at 425 for 10 min, cut up in bowl top w vanilla ice cream, serve and enjoy! The kids loved it!
Favorite Trader Joe’s finds!
Made this amazing cucumber watermelon juice with a squeeze of lime to go with dinner! so refreshing! Everyone loved it! I used one large cucumber peeled and juiced, a lot of watermelon and 1/2 a lime! Total score! I put the pulp back through the juicer 2 times for more juice quantity in my Ninja cold press juicer.
Yummazing Veg juice w a twist! Used my new ninja cold press juicer and re-juiced the pulp twice for extra juice! So good!!
