Jamie Oliver's recipe. Gorgeous depth of flavour. I used button mushrooms and omit for vegan parmesan.
Didnt do the parsley sauce cos by the time I'd stood stirring this for god knows how long while all the stock soaks in, I'd lost the will. Chopped parsley and stirred it through instead.

Plant mince koftas with black beans and rice
Mince mixed raw with finely diced onion, garlic, mint, oregano, parsley & rosemary. Added ground cumin, corriander, paprika, turmeric, salt and a few tbsp olive oil.
I added a few drops of liquid smoke to half of the mixture which worked well tasted wise.
Chuck them bad boys on the barbie for an easy summer treat!
Next time I'll plan this better and have vegan tzatziki instead of hummus ππ½
Moroccan chargrilled vegetable lasagne skillet.
I know sounds weird right? π€·π½ββοΈ So glad I experimented and birthed this amazingly tasting, comforting and satisfying dish π€€
Char grill eggplant, zucchini & red capsicum separately (sliced lengthways). Set aside.
Oil in the skillet and toast tsp cumin, 1/2 tsp crushed cloves, 1/2 tsp ground coriander, 1/2 tsp paprika for 30 sec.
Add tin of tomatoes, tsp of veg stock, crush and add 3 garlic cloves and stir for a cpl minutes.
Add 3 cups of hot water and 1 cup of dehydrated soy mince. I then added a can of cannellini beans. Stir and let bubble for a few minutes until mince soaks up some liquid.
Add a layer of broken pieces of lasagna sheets and squish them into the liquid. Allow the pasta sheets to soften a little for about 5 mins.
Start layering the eggplant, zucchini, sliced fresh tomatoes and capsicum on top of the mince layer.
Finally add any vegan cheese of your choice. I used vegan mozzarella I had in the freezer. Pop the skillet into the oven and bake on 180 for 20-30mins. Serve with crusty bread or cous cous.

First time trying chickpea flour (besan) quiche/ frittata. These were with zucchini, leek and red capsicum.
Total win and great toddler snack food.

Added a grilled super big mushroom sprayed with oil and sprinkled with thyme onto this baby. A ridiculous amount of ingredients made this sooo delicious:
Fried onions, roasted red capsicum, toms, gherkins, spinach, fresh parsley, siracha mayo, ketchup, sheese brand cheddar, Aldi vegi pattie. Bloominβ nom π
Did something that was a bit of a faff π Made yummy cannelloni π
Made a good mush of pumpkin and red lentils (wanted the toddler to eat it..) and piped it into the uncooked tubes using a sarni bag with a corner snipped off. Finish with passata poured over and I whipped up some cheesy white sauce to drizzle over the top. Shook some vegan Parmesan over all that too ππΌ
Iβll try a filling with the fresh vegan mince next time. Options only limited by your imagination here π€

Quick mid week meal: Veggie Delights brand Thai chilli fish cakes, carrot, beetroot kale salad with mint & coriander, sweet chilli sauce and fresh lime πΆ
Sundried tomato & basil creamy pasta
Blended together fried onion and garlic, homemade sundried cherry toms, can of plum toms, can of coconut cream, cashew nuts, h**p seeds and a handful of fresh basil from the garden. Added can of lentils.
Drizzled in balsamic glaze and served with garlic bread. Nom π
Obvs doesn't need as many ingredients but I was trying to pack in the nutrients for the kids π Just keep in the cashews for the thickening agent.
Homemade zucchini and carrot fritters with pea, herb & black bean cous cous and a blob of hummus. 4yo and 1yo devoured it πͺπΌ

Avocado, bio feta, chopped mint & squeezed lemon smash with cherry tomatoes from the garden and spinach on toasted sourdough lunch. π
Plant mince ball spaghetti with a tomato pumpkin sauce.
Mince balls- made from funky fields fresh plant mince, black beans, h**p seeds, chopped walnuts.
Sauce- diced onions &garlic pan fried and added to a purΓ©e of steamed pumpkin and fresh tomatoes.
Topped with cashew Parmesan & fresh parsley.
Sourdough tortilla Mexican bake.
I used the recipe below as a guide but added my own veggies, soy mince, kidney beans, chickpeas, cheese sauce layers. Used a standard burrito spice mix from supermarket and frozen mixed veg in this one as I was time poor.

Healthy cereal bars
These are a mix of raw cashews, peanuts, oats, h**p, chai, pumpkin and sunflower seeds. Carob nibs then drizzled in βchocβ sauce (cacao powder, coconut oil & maple syrup). Held together and naturally sweetened by purΓ©ed dates and coconut oil (soak dates in hot water for 15 mins then pop in the blender to make paste). I wanted to use a natural sweetener rather than maple syrup cos these are for my kiddos.
I put cacao powder in half the mixture to make some βchoc cereal barsβ.
I planned to chuck some dried cranberries in there too but they were out of date π€¦π»ββοΈ
Bake for approx 20 mins on 150c. Let cool before chopping into bars. I found they cut better (less crumbling) if they were baked thinner.
Loads of ideas out there on Pinterest etc.
Vegan mozzarella, almond feta, veg, balsamic glaze and basil leaf pizza. Drizzled in delicious pizza oil of course! ππ±
Panko breadcrumbed baked tofu nuggets. Choose your favourite dip or sauce. The toddlers were happy with ketchup and hummus. Play around with the savoury flavours/ herbs you like βΊοΈ I used chicken seasoning, onion and garlic powder.
