PUMPKIN OAT BASE: bring 1/2 cup gluten free oats + 1 cup water + 2 tsp pumpkin spice + 1 scoop collagen to boil. Bring down to simmer & mix in 1/4 cup pumpkin purรฉe + dash of almond milk + 1 tsp vanilla extract + 1 tbsp maple syrup for a few minutes until creamyโจ
Top off with CARAMELIZED BANANAS ๐(sear sliced bananas on medium heat in melted coconut oil + dash of cinnamon for a couple min each side until goldenโจ) + granola + h**p seeds (for extra protein) + cacao nibs + blueberries + a creamy spoonful of almond butter ๐คค

โจGRANOLA LAYER: blend 1 bag of pumpkin granola + 1/2 cup melted coconut oil until creamy & pourable. Pour into parchment paper lined pan & spread evenly. Freeze.
๐PUMPKIN PIE LAYER: in large bowl mix: 1/2 cup almond butter, 1/3 cup pumpkin purรฉe, 1/4 cup maple syrup, 1/3 cup coconut flour, & 2 tsp cinnamon, 1 tsp nutmeg, & 1/2 tsp ginger โจ spread evenly on top of granola layer & use parchment paper to press down for mess free hands! Pop back in freezer.
๐ซCHOCOLATE LAYER: microwave bowl with 1 cup dark chocolate chips, 2 tbsp of coconut oil, & 1 tbsp creamy almond butter. Stir until fully melted. Pour over pumpkin pie layer and spread evenly quick before chocolate layer hardens! Pop back in freezer until hardened.

WILD SALMON + all the GREENS ๐ค๐ฅ๐ซ so flavorful & nutrient packed ๐ฅ do it! season salmon fillet with avo oil, seafood seasoning, pink salt, & EBTB. Air fry at 390 for ~12-13 minโจ serve over brown rice, drizzled tahini, roasted coconut amino brussel sprouts {wash, chop in half, season with coconut aminos, ground ginger, onion salt, & pink salt. Bake at 350 for ~30-40 min until crisp}๐ฅ, air fried sweet potato cubes {chop into cubes, season w/ paprika, cumin, garlic powder, & onion salt, & air fry at 350 for 20 min} & sliced avo cubes ๐ฅ๐ซ off to yoga sculpt - hope everyone has a great night ๐งโโ๏ธ๐๐

โก๏ธGRANOLA LAYER: blend 1 bag of original granola with 1/4 cup melted coconut oil until creamy & pour into parchment lined baking pan. Pop into freezer
โก๏ธPB LAYER: mix 3/4 cup creamy PB + 1/4 cup melted maple syrup + 1/3 cup coconut flour in bowl until fully mixed. Pour over granola layer and pop back in freezer
โก๏ธDARK CHOCOLATE LAYER ๐ซ microwave 1 cup dark chocolate with 2 tbsp coconut oil & 1 tbsp creamy PB and stir until fully melted. Pour over peanut butter layer and pop back in freezer.
โก๏ธ sprinkle top with pink salt & use sharp knife to slice into bite sized squares. ENJOY๐

Green Chile Chicken Enchiladas ๐ค๐๐ฝ๐ฅ๐ฏ these low key may be one of my fave meals to date + these are gluten, dairy, soy, & refined sugar free๐made with a rotisserie chicken, black bean, & green pepper stuffing layered with green chile enchilada sauce & dairy free cashew queso โจfull tutorial in stories!! ๐
Ingredients
lemon & herb rotisserie chicken
pack of 8 Siete Family Foods] cassava tortillas
jar of Siete Family Foods] green enchilada sauce
vegan shredded pepper jack cheese
1 can black beans
1 green pepper
2-3 garlic cloves
Paprika
Onion salt
Cumin
S&p
Cilantro
Pepper flakes
1 radish
1-2 jalapeรฑos
Sliced avocado
Directions:
1) use handheld blender to shred rotisserie chicken
2) dice 1-2 garlic gloves & green pepper
3) sautรฉe on medium heat cast iron skillet with avocado oil until tender
4) mix in can of black beans & shredded chicken into skillet
5) spread layer of green enchilada sauce on baking dish
6) add chicken, pepper, & bean stuffing to tortillas & wrap like a burrito flipping top side down in dish
7) continue stuffing each tortilla until fully lined in dish
8) top off with rest of green enchilada sauce in jar, drizzled cashew queso (i did not use full queso jar), & sprinkled vegan pepper jack cheese
9) cover with foil & bake at 400 for 20 minutes
10) top with your faves! I added chopped cilantro, sliced radish, sliced jalapeรฑos, avocado, & sprinkled pepper flakes ๐ถ๐ฅ

5 INGREDIENT CHOC PB ENERGY BITES ๐คค๐ซ๐ฅ๐ so speedy & easy to whip up and perf for on the go snacking ๐ (dairy free & GF too) โ๏ธ directions: in large bowl mix 1/2 cup creamy PB + 1/4 cup honey. In separate bowl mix 1/2 cup GF oats + 1/4 cup flax meal. Pour dry into wet & stir thoroughly. Fold in ~1/4 cup dark chocolate chips. Roll into bite sized balls, sprinkle top with cinnamon (optional), & store in fridge. ENJOY ๐๐
