The Legend of Clashmore Mike, as told by a real Texan:
Now Clashmore Mike didn't invent nuthin! First off you need to understand when it comes to tales about chili, and the cooks who made it what it is, well, sometimes it's hard to tell what's fact and what's fiction. Now Texas Red goes back way before Mike. It mostly started as a simple meal thrown together by range cooks out of the chuckwag
on, using whatever they had on hand at the time. Either way, the important thing is that Mike got his hands on it. You see he had just come off the boat fresh from Ireland, he and his dog. He made his way down to Texas looking for a new start. Some boss on a cattle drive hired him on as a cook, though the cowhands figured he couldn't cook for nuthin, being from Ireland and all, but they gave him a chance. It's a good thing too, because he made the best bowl of Texas Red that any of them had ever tasted. His secret was in the ingredients. They say there isn't a chili cook alive that can make it the way Mike did. In fact, he once held off ten mountain lions by tossin' em a bowl a' red! Clashmore Mike was a livin' legend, but even he needed to slow down at some point. He eventually left the range, and made his way to Ohio to work on the canal boats up there, all the while tinkering with and perfecting his chili. He quickly became famous for the magic he could conjure from that iron kettle. Eventually though, he kinda just disappeared. Some people say he left his recipes out there for someone to find, but nobody really knows what exactly became of Mike. If you ask me, I say that whenever someone makes a bowl of red that has that perfect balance of savoriness and spiciness, well, that's when Clashmore Mike's legacy lives on.
