How to make Dandelion ‘Honey’
2 cups (100 g) fresh dandelion flowerheads, densely packed
2 slices lemon
1.5 cups (350 ml) water
about 1.5 cups (300 g) organic sugar
Shake or blow the flowers to remove any bugs
Place the water, lemon slices and dandelion flowers in a saucepan
Simmer with a lid on for 15 minutes
Leave this to cool and infuse overnight
The next day, strain out the flowers and lemon by pouring the liquid through a strainer or muslin cloth. Press down to make sure you get all of that dandelion juice out!
Weigh the liquid, and then weigh out the same amount sugar.
Put the liquid back in the pan and add the sugar. Stir and heat gently at first until the sugar is dissolved. Then bring it up to a gentle boil for approximately 15-25 minutes.
Test it on a cool plate so that it wrinkles slightly when pushed with your finger.
Pour into a clean sterilised jar and put the lid on while it's still hot
Due to the popularity of my dandelion 'honey' post, I thought I would post some other easy to identify plants that you can use in everyday meals. But first, some simple foraging rules:
1. Correctly identify your plant before picking it
2. Choose a safe place away from a main road - also away from road pollution
3. Choose a clean area away from popular dog walks, so not directly next to a path
4. If picking from a field, be sure it hasn't been sprayed recently
5. Don't trespass
6. Don't pull plants out by the roots - just trim the bits you need
7. Always rinse plants before eating
8. Always leave some plants for the bees and other insects, they are d**g an important job of pollinating

Now is the time for spring foraging in the Alps. 🌼🌱 at the end of last week I made a heap of dandelion honey, being careful to leave enough for the bees 🐝 and early butterflies 🦋
I also saw garlic mustard (last picture) - also known as Jack by the hedge.
There is also wild garlic about - look for shady places near streams. 🌱.

For those that have heard us talk about the beautiful Bearded Vulture, a chick had been born to the nest on the cliffs nest to Avoriaz
"Hatching continues. The Morzine chick was born recently.
Please continue to respect the ZSM.
Rearing in the nest by the parents lasts approximately 4 months, the time for this chick to grow to its adult size during its first flight."
Our final snowshoe of the 23/24 winter season was an absolute show stopper. Thank you to Laura and family for an excellent excuse to go up the mountain to see this! 🌄❄️👣💙
Our lovely group on our last Open Group Snowshoe of the season. We even had bonus untracked fresh snow to walk in 💙❄️👣🌞
We weren't at work today but went climbing in the sunshine instead. Had a lot of attention from these who just got closer and closer! I counted 13 at one point close to us but there were still more higher up.

🇬🇧Such a lovely spring walk today to the beautiful Alpage of Graydon. I love this picture of Bear although can't decide if he has just descended from heaven or about to be beamed up! As we were by the Chapel, I guess it's the former!

We started in the rain and finished in the snow. When a ski resort closes for the season it means it gives us a new place to snowshoe so that's what we did! Thanks to Sam, Debs, Kath and Richard for being so intrepid. I hope you've dried out now!
Ps, I think we broke the dog...
On Monday we were walking in an incredibly snowy cloud but it meant that we were making fresh tracks and the snow was perfect for snow angels!
Nothing to see here, just a gentle snowshoe walk through fab snow watching spring emerge 🌼🌞

We waited until the rain stopped then headed out and got the bonus of a sunset 🌄. One of the best things is taking out returning clients and getting a big hug from them because almost all of our clients are actually just new friends 💗.

When Holly came on a snowshoe with me last week, I learnt of her charity challenge event this summer where she will be hiking 100km in the to raise funds for the amazing charity 🎀. Snowshoeing is good training for hiking and I gave her lots of training tips to help her succeed. I decided to donate her snowshoe fee to me back to her to raise money for this really important charity. Even more pertinent to me today as I went for my mammogram ♀️.
