Miso Noodle
In a wok fry some vegetables with chopped garlic- I took a bunch of water spinach ( Kolmi in Bengali), a medium onion sliced, a capsicum and a cucumber. Set aside. Then fry some chicken strips marinated in soy sauce and garlic paste till brown. Set aside. In a bowl mix 1 tbsp miso paste, 1 tbsp peanut butter, about 2tsp chilli oil, 1tsp Gochugaru, a table spoon of sugar, soy sauce and vinegar. I used a couple of table spoons of hot water to dissolve the miso paste and the peanut butter. In hot wok, fry some chopped garlic and pour the mix . Let it thicken and take off the flame.
Boil udon noodles. In a big bowl mix the noodles with the vegetables, chicken and the sauce. Finally add lemon juice and chopped fresh coriander.
