☘️ We love a green holiday, especially when it gives an excuse to infuse your mom’s family recipes. 16 mg 🌱
Corned Beef & Cabbage Dumplings with infused brisket fat. Each dumpling is 3mg, but it’s a holiday so we didn’t stop there.
They’re floating in soy & black vinegar dipping sauce that was steeped with decarbed Runtz and Gelato for over 30 days giving it a malty, complex flavor so mind blowing, you’ll want to mop it up, especially when you realize it’s 2mg per tbsp.
Slide the dumpling through a golden spread of homemade spicy mustard infused with a few drops of lemon tincture - 1 mg per tbsp.

If you’ve never had chayote, it might surprise you to learn that the delicate slices lining this plate come from a bright green gourd. The texture is slightly crunchy & it tastes like a cross between cucumber & squash - making it the ideal base for a refreshing salad.
Sprinkled with salted cod & dollops of infused queso de cabra, Chef finished off the dish with crunchy, toasted cracked corn, pickled red onion, and a drizzle of honey.

Bistec Encebollado is essentially steak & onions in Puerto Rico, but if you sat down expecting a dish as simple as that, you haven’t been paying attention.
Chef’s take on the flavor-packed classic includes seared NY Strip, cooked perfectly rare it practically melts in your mouth. It’s sitting on top of yucca purée & delicate array of onion petals. The green wasakaka is savory, limey, & super herby to all the flavors of the dish to the next level. 6 mg

Last week’s dinners started with an amuse of croquetas de berenjena guisada.
Stewed eggplant & tomatoes is the kind of homey Caribbean dish that’ll remind you of dinner at grandma’s. Hearty, savory, & smokey, Chef took a classic to the next level by rolling the infused mash in panko before a quick dip in the fryer to create a airy & crunchy croqueta. The saltiness of the green olive emulsion it sits on brings out the beautiful flavor of the eggplant while adding a little pinch of umami at the finish leaving you wanting so much more than this one perfect bite - just what an amuse is meant to do 😉

This fresh water trout has a slightly gamey, though mild flavor which is why we paired it with a luscious, buttery, and above all luxurious caviar buerre blanc. For pop of color & flavor you’ll find a bed of shaved asparagus and flowering purple basil at their peak of freshness. It’s crispy, flakey, creamy, salty - all the things you want from an infused plate.
As if that weren’t enough, it’s paired with a super refreshing, & of course infused gin & lemon Tom Collins garnished with a little more of that flowering purple basil - couldn’t help ourselves.
All-in-all this meal reigns in at a whopping 11 mg.
