Right after culinary school I used to swear by fondant. I thought it was the best way to decorate a cake. And after so many years of learning different and new cake decorating techniques, I refuse to use fondant now. And a couple years ago I tried out rice paper for the first time and it’s definitely one of my favorite cake decoration.
I got to create this beauty for this lovely June wedding, I always just drop off for delivery but this was the first time I got to see the ceremony and hear vows. Congratulations Jess & Ruben, so happy to have celebrated both of you this past weekend. Wishing you both a lifetime of partnership and all things sweet ♥️

My grandpa once told me that god came to him in a dream and told him that he would live until he was 100 years old. I was 16 at the time and told him that that’s such a long time. And I remember him being excited to live, to see things. And then he said that maybe he would even see me get married. And so I said you promise? And he said I promise. And now at 30, it feels like it wouldn’t have been enough time.
I was only able to see my grandpa a handful of times in my life. He lived in Korea and we didn’t have the funds to go visit all the time. I remember everytime I would call he would always tell me he missed me and asked when I’d come see him. I always responded with I’ll come see you soon and he would always say, I’ll be waiting for you. And when I would go visit, he would greet me with such a big smile and say you came!
My grandpa was such a kind and loving man. And although he lived so far away, I always felt connected to him. He is actually the person who named me. I go by my middle name but my first name is actually Jinkyung. It means truth and sunlight. So Jinkyung meaning is a true and bright person. I feel so grateful for the meaning of my name and how much thought he put into it. My grandpa loved me so unconditionally. I was always enough and I will never forget that.
The last time I saw him, I made sure to spend time with him. And one of the last things I said to him was, even though we live far away thank you for loving us all the same. I never got to make him a cake while he was alive. So this cake is for him.

So thankful for this couple who trusted me from start to finish. I had an idea for their cake even after the design was finalized but asked them if they’d be open to the idea (a week before their wedding day) and they let me run with it. This design is the people pleaser version of me. The one that doesn’t have an opinion, goes with the flow and wanted to be liked. A bit scared to show any edge because it made me worried that people would leave. The part of me I kept in a box to be more palatable to everyone else. But still in all of that, a beautiful piece of me. The part that learned to be empathetic, compassionate and to just genuinely love. I call her, Jane.

2020 brought in a lot of anxiety for me as I’m sure it did for a lot of you. Particularly after the reports of Asian hate crimes starting, I was scared. I was scared to go out by myself, I was overly friendly because I didn’t want to give anyone a reason to place hate on me.
Fast forward, 2021 was an extremely tough year for me. I left an unhealthy relationship that pushed my anxiety into an all time high. Which forced me to really look into myself. The trauma, patterns, how I respond to certain things and I began to really pay attention to how these things effected all aspects of my life, professional and personal.
Mental health is extremely important to me so I started to see a therapist again. And since then, I’ve been doing a lot of internal work over the last few months. And during that time my therapist helped me identify parts of myself. And over time, I started to understand myself in a way that I had never been able to before. The true vulnerability I am allowing with myself is not an easy journey. Self reflection is hard and frustrating and makes me feel so upset at times. But within that there’s also grace and understanding and showing kindness to myself.
Over the past 6 months, I’ve allowed myself the space to be really true to me without the doubts and questioning of having to please others. And that is exactly what this shoot was for me. I’ve always had guilt doing something for myself. It always made me feel so selfish but now, it feels a bit silly that it was something that was so hard for me to do. So these cakes are a representation of who I was, who I am and who I want to be.

When I decided to plan this shoot, I didn’t think much of it. It was more about wanting to create something that was outside the box of what everyone is used to seeing for cake designs. I was inspired by unusual items, like vases and modern home decor.
A lot of trial and error happened while designing these pieces. But once I got to the end, I realized I was telling a story through my art. And I stayed up late last night thinking about sharing this story with all of you. It’s raw and just truly a representation of everything I’m going through mentally.
On the day of the shoot I told Lindsay, Lindsay Newton]] , that I wanted this to portray a raw version of myself. Not the presentational, masked, cookie cutter vision. And she did an amazing job capturing all of that.
I’ll be posting different parts to this as each piece I created represents a different part of me. So despite whether you’re here to just enjoy these photos or here to listen to my story, I appreciate you being here at all and I hope you enjoy. And maybe in the end my story will resonate with some of you.

I absolutely hate food waste and unfortunately happens so much in the food industry. So these pint containers are officially my new cake tasting. Similar to my cake scraps but in a more cleaned up form. These will be available for my wedding cake inquiries only. I know they’re not the prettiest but the tasting is about the taste, no? 😉

Today I started cleaning out my photos and came across this one. This was the first cake I made after moving to Portland and ordered from someone who didn’t already know me. She had found me through google and I was so ecstatic. I couldn’t BELIEVE that someone who didn’t know me and had never tried any of my cakes wanted to order one from me. I was constantly worried about cost and if she would think that I was charging too much, especially since I had heard those words from previous coworkers and past friends. But after I told her the cost (& it was definitely a fraction of what I charge now) my anxiety built up, the expection and readiness on my end to be questioned as to why I was charging so much. But then she simply just said “okay, that sounds about right”. I felt immediate relief. And it might sound crazy but that one time purchase forever changed the way I viewed myself & my art. Now don’t get me wrong, it’s definitely been a journey and constant arguments with myself to get me to where I am now.
But as a small business owner, you come across so many people who tell you that you’re charging too much. There’s always this intimidating factor to it because you don’t want to scare people away with your prices. But once you truly see the value in what you do and value yourself, people will see that and follow. I’m proud of where I am today but I am also so fu***ng proud of where I started. So incase no one has told you today, if you are a small business, you should be so damn proud of yourself.
Because I believe everyone deserves a little gold on their birthday 🥳♥️ Lemon Strawberry for this one.

I turned 30 this week and I felt that it was fitting to have another fun facts post of myself! ♥️
- Even though I’m a Pastry Chef, I don’t like desserts 😅 I prefer savory over sweet.
- I knew I wanted to go to culinary school my freshman year of High school. So I went to Le Cordon Bleu in 2009.
- I like to call myself a pastry chef with a bartender mind. I throw things together with my flavoring and sometimes not even try it but just genuinely believe it will taste good. Which goes against the entire chemistry and perfection component of the pastry world. (Luckily I haven’t had complaints so far 😝)
- I always loved teaching. While I love the art of what I can create, teaching has always had place in my heart. I can share my knowledge and possibly make a change in someones life.
I’m excited for what this new decade will bring for me & Hedonish Desserts. Thank you for following my journey. ♥️
