Good afternoon! Hope you are having a lovely weekend, I have some news, this week I’ll be cooking WEDNESDAY and THURSDAY only for the last time doing lunches.
I know, so sad and so sudden, the reason is that you favorite plant based chef got an amazing job offer that will require my full attention and will allow me to grow more with my passion, I’ll share details as I can later on.
I can not thank you enough for all the love and support over the years, this is not the end of Zesty Bae, you’ll still see me very much around and hopefully I’ll be cooking for you soon in a way or another.

‼️IMPORTANT MESSAGE ‼️
~As some of you already know, I had a pretty bad car accident last Wednesday where I flipped my Jeep down a hill a couple times right after I left gallows bay at 12:30, thankfully and to the surprised of many I was not badly injured, just minor cuts and bruises but it did messed up my back and I have been resting for the past 5 days.
I will be back cooking this week only 3 days, Wednesday, Thursday and Friday with a simpler menu, $20 bowls, until I feel physically 100%.
I apologize for all the meals I had to cancel last week, for those who had pre paid already don’t worry I have it all registered and it can be use for future meals.

Truffle Tuna golden roll 🟡 🥢
watermelon tuna, mango, avocado, greens, veggies & golden beets w/ spicy truffled Mayo + wakame cabbage salad and umami roasted edamame (available as a burrito sushi)
🍉Watermelon tuna? What!? Yes, and it is just as delicious as the real thing 😜 many costumers over the years have questioned my “vegan tuna” because it can not just be watermelon

Obviously you don’t have to be vegan to enjoy a good plate of plant based food and I never push or encourage people to change their food habits if they have no desire to do so but I do want you to know you can still make better choices without compromising or giving up all the things you like.

I do eat fish occasionally and I love sushi very much but after getting Mercury poisoning a few years ago I decided not to completely eliminate seafood but to be more conscious about it and be a bit more careful how I consume it and how often.
I hate trying to fake meat or use processed foods that might be vegan but packed with a bunch of ingredients that you can’t pronounce and are probably not that good for you, so this “tuna” I make only has 1 ingredient, since watermelon has a lot of water content and has some sugar I just let it cook and caramelize a bit in its own juices, so I don’t even add oil or extra anything ✨
This week’s sushi is full of flavor, sweet, spicy and umami!!!!!
Zesty pesto 🍃 Cheesy, garlicky and healthy!
One of my favorite and easiest thing to make for dinner is pasta in fresh pesto sauce 😋 so simple so delicious here is my quick vegan pesto recipe you make! It’s good to keep it in the fridge up to a week or even freeze it for a couple weeks but it will never last that long, at least not at my house🍃
•2-3 cups packed fresh basil (large stems removed)
• 2 garlic clove
•1/4 cup walnuts
•3 Tbsp lemon juice
• 3-4 Tbsp nutritional yeast
•1/4 tsp sea salt (plus more to taste)
•Red pepper flakes (to taste if you want a kick of spicy)
•4 Tbsp extra virgin olive oil
• 4-5 Tbsp water (as needed)
~Add all ingredients except the olive oil to a blender or food processor and make a paste, then add slowly the olive oil and then some water to achieve desire consistency, taste and adjust flavors if needed, it should be on the salty side more than not.
Remember that you can use pesto for a lot more than pasta, some of my other favorites are to spread it on bread or sandwich, as a salad dressing or on eggs!
