Mike's Q
We are a professional competition bbq team, competing across Texas for over 15 years.
Well, looks like things are heating up! We're determined to make a splash before the end of June. So, we decided to check out the Joe Davis memorial cook-off in Hempstead last weekend. Let me tell you, it was quite an adventure! Our cooking skills were put to the test, especially with one of our smokers that we're still getting the hang of. And boy, did it show! Our rib turn-in landed us in 11th place, and our chicken didn't fare much better, coming in at 9th place. But hey, we're not ones to get discouraged easily. Our brisket turned out pretty good, although it was a tad on the tight side. But hey, who am I to judge, right? And guess what? Our brisket took home the gold! Boom! Talk about turning our day around. We were definitely thrilled about that. It's a good thing we added the Char-Griller competition smoker to our arsenal. It clearly paid off. Just kidding, by the way. It was cooked on a barrel.
Alright, folks, we've just returned from our little adventure at Lost Lagoon, and now it's time to get down to business. Let me give you the lowdown real quick. Jenni's chicken game is on fire! Seriously, her skills keep getting better with every cook. We faced some tough competition, but guess what? Our sancho sazon chicken snagged a respectable 8th place! All thanks to our trusty Race crew drum smoker. Can I get a round of applause? The venue was absolutely awesome, and the event itself was a blast. Our next stop? Livingston!
Sancho Sazon effortlessly enhances the flavors of these mouthwatering chickens, which are being expertly smoked on a state-of-the-art Jason Sagmiller Racecrew drum smoker.
So here's the lowdown on the COTA showdown results: we snagged 8th place for ribs, 5th place for brisket, and a solid 4th place for chicken. Overall, we landed in the respectable 5th spot. But hey, that's not all! Besides the intense races, we had some top-notch food company that made the whole event a blast. Gotta give a big shoutout to Sancho Sazon for helping us dominate in all three categories. And let's not forget Jason with Racecrew drum smokers for providing us with an amazing product. The hasty bake really stepped up its game too. Now, for the next cook, Jenni will be taking on the challenge solo. Let's all wish her the best of luck!
The bbq cook off season is sizzling hot again! We recently took part in the fierce competition in Bryan, and let me tell you, it was a smokin' good time. With our brand new rig and a collection of top-notch smokers, we had a lot to get accustomed to. But aside from our chicken, we were pretty darn satisfied with our turn ins. We even snagged a mouthwatering 3rd place for our ribs. And to top it all off, our talented son brought home a sizzling 1st place for his steak out of a whopping 33 entries. Talk about being one proud daddy! Of course, a huge shout-out to our loyal supporter, Sancho Sazon. Your unwavering support means the world to us. Now, it's time to rev things up even more because COTA is just around the corner, with an adrenaline-pumping NASCAR race in Austin. Buckle up, folks!
We will be starting our cook season very soon. Some changes are coming with a new rig and possibly different cooking implements. Stay tuned!
Nothing wrong with my pitmaker, just need something smaller to compensate for a more comfortable rig. Stay safe.
A Little rib practice today. Sancho sazon seaonings. Stig sauces for the last stage of cooking.
A little warm up yesterday, before Thursday. Mamacita will be loaded with 60 plus pounds on turkey day.
Smoke and sounds was a great event. As for our food , the locals didnt much care for it. We did manage a 7th sancho sazon spiced chicken (31teams) Followed with our favorite STIG sauces. I’ll keep this one short. On to the next one.

When Mike Gomez tells me he doesn’t quite know much about NASCAR and “what’s the infield anyway?”, I tell him “you tend the fire, I will explain stock car racing!” Competing alongside our bbq ride or die team Uncle Stabby's BBQ with Torri Fears and Matt, while we trained my best cousin Molly Minatra was simply a delight. We had such a wonderful weekend and couldn’t be more honored! Pardi Batch Spirits BBQ Showdown presented by Pit Boss Texas Motor Speedway IBCA Info
Reserve Grand champion this weekend at Texas Motor Speedway NASCAR. IBCA Region 1 bbq cook off. Congratulations to Jason Sagmiller on his GC. Big thank you to our official spice sponsor, sancho sazon seasonings. And to a great teammate and woman, who puts up with this crazy passion of mine. Jenni sellers, thank you babe. Yes, we got to take the big stage at NASCAR
All set up, capped at 39 and full. Stacked field and honored to be here.
Great event that benefits cops. 6th chicken and 2nd place brisket. Sancho sazon all purpose for my chicken and stig sauce 2.0 took our brisket to another level.
Sancho Sazon all purpose seasoning and Lemon lime combo keeps the chicken streak alive. Pitmaker smokers and grills keep performing perfectly.

Four more weeks for the invitational.
Great year: Finished 39th in IBCA points run, 19th overall in Chicken, 20th Ribs, and 20th Brisket. And a hard earned 3rd in our Region. Well over a hundred teams chasing points .
This secured us an invitation to IBCA’s first invitational championship cook off labor day weekend in Hutto.
Special thanks to our sponsor Sancho Sazon seasonings and good friend Mitch Slaymaker. Mamacita built by pitmaker was flawless. And my teammate and future wife Jenni Sellers. Remember, we ain’t afraid of no ghost. (Inside joke)
To our followers: wow, your likes and shares help us do what we do. Thank you!
Proud of our sponsor and his great seasonings. Sancho Sazon Seasonings
In Columbus this morning, good luck to everyone. Fans of Pitmaker Pits PITMAKER Society Sancho Sazon Seasonings
Just a little Sunday fun. We stayed home this weekend but we will be in Columbus this coming Friday and Saturday.
Ok, we made it back from Hearne. Tailgating for a Turf bbq cook off proved to be challenging in so many ways. Folks, it’s starting to get hot and i miss my big cook trailer but sleeping in a bed is more comfortable than an air mattress. Anyway, we were able to finish with a 7th place in Pork Ribs (anonymous tip), 5th place in Brisket (meat hustler)(MEATER: Meat 'n' Greet probe, and a 2nd place in Chicken ( Sancho Sazon Seasonings). Small but tuff field and was honored to finish 6th overall. As always thank you to our sponsor Frank Hernandez. Your positive text help more than you know. And thank you to Victor Hugo Howard and George Shore for mamacita. Fans of Pitmaker Pits PITMAKER Society
After a long week of travel and helping with the office lunch (piggy), we headed to Hearne for a cook off. I guess we will never get our fill of this sport. YES! Mamacita had lights installed over the Holiday. Thank you Cole and Ericka Strickland. And my youngest Enzo for helping his old man. Mainly, helping him up off the concrete. Small but stacked field today, we are honored to be competing against them. Good luck to everyone, results to post later. Sancho Sazon Seasonings
So, last weekend we headed over to League city. Humid and warm is all i can say, because it could have been a lot worse. Our brisket and chicken entries were good but didn’t have that wow factor they needed. Our Ribs were the best we have turned in all season but you know how many times I’ve said that. Well mamacita ran flawlessly Fans of Pitmaker Pits and the MEATER: Meat 'n' Greet probes were spot on. But Sancho Sazon Seasonings brought home a 1st place rib out of 44 teams. We were extremely happy, mainly to get paid. We will be taking a break this weekend as i will be working out of state. Thank you to all who like and share. Means a lot, don’t ever hesitate to ask for a recipe. And remember your always welcome to stop by for a sample and say hi. And a cold one of course. Special thanks to Jenni for supporting our habit in so many ways. This first place ribs is dedicated to my late friend Tim Vasquez, i told you we would get one for you soon, Rest in peace brother.
Well it wasn’t a good showing last weekend in Buda. The locals didn’t care much for our food. Wish i could blame mother nature, but I can’t. Mamacita PITMAKER Society cooks the same in any kind of weather. Me? I’m a different story; the rain, wind, and cold did not help. We finished 11th brisket and 15th ribs out of 47 teams. Don’t ask me about chicken ever again. Sancho Sazon Seasonings and my probes , MEATER: Meat 'n' Greet along with my pitmaker Fans of Pitmaker Pits did awesome.
We are in League city today with approximately 65-70 teams. Pics to follow later from this cook. Thanks again for following, liking, and sharing Mike’s Q. Chronicles of a bbq addict.
