INGREDIENTS
9 tablespoons butter, softened
â…“ cup sugar
1 cup molasses
1 egg
2ÂĽ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
ÂĽ teaspoon salt
Âľ cup water
CARAMEL SAUCE:
1 cup packed brown sugar
1 tablespoon cornstarch
1 cup cold water
ÂĽ cup butter, cubed
1 teaspoon vanilla extract
heavy whipped cream, optional
INSTRUCTIONS
~ Preheat oven to 325 degrees. Grease a 9 inch round springform pan or square pan and set aside.
~ In a large bowl or kitchenmaid mixer, cream butter and sugar until light and fluffy. Beat in molasses and egg until blended together. Combine the flour, baking soda, ginger, cinnamon and salt; add to creamed mixture alternately with water.
~ Pour the cake into the 9 inch pan. Bake for 35-40 minutes or until toothpick in center comes out clean. Place on a wire rack.
Caramel Sauce: In a medium size saucepan, combine brown sugar and cornstarch. Add the water and bring to a boil until the sauce starts to thicken about 2 minutes. Remove from heat and stir in the cubed butter and vanilla until melted and smooth. Serve over warm cake with whipped cream.

INGREDIENTS
1 head of cauliflower
Fresh thyme
2 bay leaves
4 cups (1l) vegetable or chicken stock, more or less, depending on the size of the cauliflower
1/3 cup (70)g melted butter
Fresh cracked pepper
DIRECTIONS
1. Preheat your oven to 400ºF (200°C). Trim the bottom of the cauliflower and remove all the leaves and the stem, but without breaking apart. Give it a quick rinse and pat dry.
2. Place the whole cauliflower in a pot and cover with stock, add fresh thyme and bay leaf. Bring to a boil and simmer for 12 minutes.
3. Drain and transfer the cauliflower head in a cast iron skillet or any oven proof pan. Ladle a little of the cooking stock over the cauliflower then drizzle with melted butter on top. Sprinkle with fresh thyme and pepper.
4. Roast in the oven for 10-15 minutes, depending on the size of your cauliflower, until golden. Baste with cooking juice from time to time. Check with a knife, if it slides in easily, then it’s cooked. You can broil for an extra 2 minutes if you want to give it a bit more color, but keep an eye on it so it doesn’t burn.
5. Remove from the oven and sprinkle with fresh thyme. Slice, and serve with an extra drizzle of the buttery cooking juices.
Note: For a smokey non-vegetarian version, add crumbled bacon on top of the roasted cauliflower.
PREP TIPS
~ When selecting cauliflower, it should have compact curds that are clean. Look for thick, compact, heads of creamy white florets, with no spots or bruising, and firm to the touch.
~ Remove the stalk from the head by cutting around it with a sharp knife. When the stalk is removed, the core with the florets attached will be remaining.
~ Don’t wash cauliflower until you’re going to cut it up and cook it because residual moist will spoil the vegetable. You can soak it in salted water or vinegar water to force out any insects lodged within the floret.
POST THANKSGIVING TURKEY MEATLOAF
Direction
1. Preheat oven to 400 degrees F [200 degrees C].
2. In a bowl, mix the turkey, milk, bread crumbs, and eggs by hand. Season with salt and pepper. Fold the cheese cubes into the mixture. Transfer to a loaf pan, and top with ketchup.
3. Bake 1 hour in the preheated oven, to an internal temperature of 180 degrees F [85 degrees C].

INGREDIENTS
3 c. finely crushed ginger snaps, plus more for garnish
12 tbsp. butter, melted
1 15-oz can pumpkin puree
3 tbsp. sugar
1 tsp. cinnamon
2 c. heavy cream
8 oz. cream cheese, softened
DIRECTIONS
Make crust: In a large bowl, mix ginger snap crumbs with melted butter until fully coated.
Make pumpkin layer: In a small bowl, mix pumpkin puree with 1 tablespoon sugar and cinnamon. (For best results, transfer mixture to a piping bag.)
Make cream layer: In a stand mixer fitted with a whisk attachment, beat heavy cream until stiff peaks form. Fold in cream cheese and remaining two tablespoons sugar. (For best results, transfer mixture to a piping bag.)
Among four mason jars, layer ginger snap crust, pumpkin, and cream, alternating until you reach the top of the jar.
Garnish with ginger snaps and serve.

1 can (15 ounces) black beans, drained and rinsed (1½ cups)
1 medium carrot, shredded (about 1 cup)
½ small red onion, minced (about ¼ cup)
1 cup cherry tomatoes, halved
2 tablespoons fresh cilantro, diced
1 avocado, diced
½ lime, juiced
1½ tablespoon garlic granules or powder
1 teaspoon ground cumin
2 generous pinches of cayenne pepper, or to taste
INSTRUCTIONS:
In a large bowl, mix the beans, carrots, onion, tomato cilantro, lime juice and spices. Stir in the avocado just before serving and enjoy. :D
