These biscuits are soft and fluffy in the middle, crisp around the edges and they Melt. In. Your. Mouth! Made with a sweet, cream cheese dough, they are rolled in toasted almonds and filled with a generous helping of homemade apricot jam! Sooooo delicious, and go perfectly with a morning coffee!

It's been a while since I've baked anything so delicious as this Citrus Meringue Pie, and let me tell you, it did not disappoint!
One of my me favourite things to make, a mixed citrus curd of , , and ... a yummy tart filling with a hint of sweetness. Then piled high with super creamy, velvety peaks and finished with a delicious caramelized crust!
Perfect for or long weekend afternoon tea, I do love a blow torch!!
