Veg suji upma 😍😍 - a hot plate of rawa upma loaded with veggies

1. Suji - half cup
2. Veggies - green peas + corn + carrot + beans + onion - half cup
3. Curry leaves - 10 to 12
4. Cashews - 4 to 5
5. Chana dal - half sp
6. Urad dal - half tsp
7. Hing - a pinch
8. Mustard seeds - 1/4 tsp
9. Cumin seeds - 1/4 tsp
10. Ginger - half tsp
11. Water - 1.5 cups
12. Salt - 1 tsp

- Dry roast suji on low flame
- Heat 1 tsp of oil and add hing, mustard seeds, cumin seeds, chana dal, urad dal and cashews
- Roast until light brown. Add ginger and curry leaves
- Add all the finely chopped veggies and cook until tender
- Add water and salt and bring to boil
- Lower the heat and add roasted suji
- Mix to remove all lumps and cover and cook on medium flame for 2 minutes
- Remove from flame and keep covered for 5 minutes before serving

Achaari Gobhi !!

Ingredients:

Cauliflower - 3 cups, cut into small florets
Onion - 1, thinly sliced
Ginger garlic paste - 2 tsp
Tomato puree - 4 tbsp
Yorgurt - 4 tbsp
Achar/ pickle masala - 2 tbsp
Lemon juice - 1 tbsp
Dry mango powder - 1tsp
Fresh coriander- 2 tbsp
Oil - 2 tbsp
Salt to taste

For Chana
Chana - 1 cup (200 gms)
Green coriander - 1 to 2 tbsp
Oil - 1 to 2 tbsp
Green chilli - 2 to 3
Ginger julienne - 1 inch
Cumin seeds - ½ tsp
Turmeric powder - ¼ tsp
Coriander powder - 1 tsp
Mango powder - ¼ tsp
Red chilli powder - ¼ tsp
Garam masala - ¼ tsp
Salt - 1 tsp

For Halwa
Semolina - ½ cup
Ghee - ¼ cup
Sugar - ½ cup
Cardamom powder - ½ tsp
Cashew (chopped) - 1 tbsp
Almond flakes - 1 tbsp
Raisins - 1 tbsp
Water - 1½ cup

For poori
Wheat flour - 2 cups
Salt - ½ tsp
Ajwain -1 tsp

For Chana
1 Take a cup of black Chana, wash it and soak it overnight
2 Add soaked chana to cooker, a tsp of salt and a cup of water
3 Mix it and close the lid of cooker.
4 Cook it on medium flame until the first whistle blows
5 Cook it on low flame for 3 to 4 mins
6 Switch off the flame after 4 mins
Wait until the pressure of cooker releases.
7 Preheat a pan, add 1 to 2 tbsp of oil and heat it.
8 Add ½ tsp of cumin seeds and turn the flame to low.
9 Add 4 vertically chopped green chillies
10 Saute the spices and add 1tsp coriander powder
11 Add ½ tsp of turmeric powder and saute the spices
12 Add the cooked Chanas along with the water residing in cooker
13 Add ¼ tsp red chilli powder, ¼ tsp garam Masala, ¼ tsp mango powder and turn the flame to high
14 Cook it for 2 mins and add some coriander leaves finally

For the Halwa
1- Preheat a pan, add ¼ cup of Ghee in it.
2- Melt it and add a ½ cup of semolina to it.
3- Roast while continuously stirring it on the medium flame.
4- Roast until its color changes to brown.
5- Add the chopped cashews, almonds and roast them along with semolina.
6- Add some raisins and 1.5 cups of water.
7- Add a ½ cup of sugar to it and cook it on the low flame until semolina expands.
8- The semolina has expanded after 5 minutes.
9- Stir it again and cook until it reaches to its thicker consistency.
10- Add some cardamom powder to it and mix it.
11- Pour it in a separate bowl and serve

Lemon Coriander Soup!

Calories – 40 Kcal
Carbohydrates – 3.9 grams

Ingredients:

Lemon juice -1 tbsp
Cilantro/ coriander, finely chopped (leaves and stems separately) - 30 gms
Garlic, finely chopped - 1 tsp
Vegetable stock - 2 cups
Scallions/ green onions, finely chopped - 1 tbsp
Olive oil - 1/2 tsp

Recipe:

Heat oil in a deep-bottomed pan,
Add garlic, cilantro stems and onion to it once hot
Sauté for 1-2 minutes.
Add vegetable stock and lemon juice.
Finally add coriander, while stirring continuously.
Add salt and pepper per your taste and Serve hot!
