-Half Tomato sliced
-1 Avocado sliced
-1 Large handful mixed greens
-2 Tablespoons Hummus
-1/2 Tablespoon Tahini

Peel 2 eggplants, slice in half, lay on roasting pan. Drizzle olive oil, sea salt, pinch of garlic powder and roast in oven at 400 for 25 minutes. So easy and I put it in everything! Salads, sandwiches, dip, pasta ๐๐ค๐
