HOW TO AVOID CAKE CRUMBLING WHILE ICEING IT
Recently, someone reached out to my inbox and asked "how can I prevent a cake from crumbling when icing it?"
So Iโm going to answer the question here so as to help others who are having the same challenges.

You see, in the past, I had the same problems with this for a while until I discovered several helpful ways to help prevent tragic crumbles.
The following tips should solve your problem:
Place the cakes in the freezer for about an hour before assembling and decorating them.
Cold cakes are far easier to work with and, as a result, far less frightening because they are much more solid and less likely to fall apart.
Make a simple syrup (dissolved sugar in water) and lightly soak the tops of the cake layers with a pastry brush (or something similar) before icing.
This will not only moisten the cake but also help to keep crumbs in place.
When icing less stable cakes that tend to fall apart more easily, using a piping bag comes in handy.

Pipe an even layer of icing on top of the moistened cake layers (no tip required).
Starting from the center, pipe in a spiral pattern towards the outer edge, being careful not to leave any parts bare.
Then, smooth out the piped frosting with a long cake spatula/palette knife.
This not only helps to create even and level layers, but it also results in much less pulling of the sponge when smoothing out the frosting.
Use the same piping bag technique for the top and sides of the cake, and blend the lines with a palette knife and a cake smoother/scraper to make a nice coat of frosting.

Nothing says impressive more than this burnt Basque cheesecake.
With a deep caramelised top and creamy interior, our version of this famous Basque dessert is the perfect treat for your mums this Mother's day.
Ingredients:
325g full-fat cream cheese
130g caster sugar
3 medium eggs
300ml double cream
A pinch of salt
20g plain flour, sieved
350g strawberries, hulled and quartered
A handful of fresh basil leaves, sliced
1 tbsp icing sugar
Recipe:
1. Preheat the oven to 220ยฐC. Grease a high-sided 18cm round cake tin and line with greaseproof paper, ensuring the paper is twice as high as the tin.
2. Either in a stand mixer with the paddle attachment or using a wooden spoon, beat the cream cheese and caster sugar for 2 minutes. Beat in the eggs one at a time. Gradually pour in the double cream, mixing constantly. Fold in the salt and flour, then tip the mixture into the lined tin.
3. Place on a baking tray and bake for 30-35 minutes. The top should be thoroughly caramelised and the cheesecake should have a good wobble when very gently shaken. Allow to cool then place in the fridge for at least 2 hours or overnight.
4. Combine the strawberries, basil and icing sugar. Remove the cheesecake from the fridge 30-40 minutes before serving, slice and
serve with the strawberries.
