No strain homemade Greek yogurt...say what?! Maybe I'm not the only one to discover how to get thick Greek style yogurt without straining, but I'm pretty happy with myself nonetheless LOL. After making yogurt in my Instant Pot, I pour into mason jars and leave a bit of headspace. Once chilled the liquid whey will rise to the top and you can pour it off. Continue the rise and pour method until it's thickened to your liking...the end! 😋

I did a little experimenting in the kitchen last night. I don't have an exact recipe, but I'll caption photos with ingredients. I will definitely make this again, but next time I will add some red bell pepper and maybe some chicken. Could spice it up with additional seasonings, too.

For me breakfast is the easiest meal of the day to eat healthy. When I start my day with whole nutritious foods, I feel better and don't have near the sweet cravings throughout the day as I would if I had pastries and proccessed foods for breakfast.

Mexican avocado egg bake... This is my first try at baking an egg in an avocado half. It was good, but next time I will do it a bit different. I had trouble getting the egg cooked...not sure if all the cheese had something to do with it or not? I recommend waiting to add the cheese until the egg is almost done. You also need to scoop out some of the avocado so the egg doesn't spill out. I seasoned it with my favorite Mexican spices and baked at 425 degrees for about 15 minutes.

Saturday nights leftovers make a yummy Sunday brunch! Minus the bacon wrapped jalapeno poppers and I'd consider it a healthy meal. :)

Kabobs included shrimp, fresh pineapple, portabella mushrooms and tiny new potatoes. Brush in a glaze of apricot preserves, Old Bay spice blend and pink salt...grill until shrimp is done. Potatoes take a little longer so put them on a separate skewer and start first. This is a perfect combination of flavors and glaze is so good...even on the potatoes. Red bell pepper would add a nice pop of color and flavor, too. Hope you're enjoying this grilling season as much as we are!

Starting the day out right with a nutritionally balanced breakfast and my YL oils! The past few days I've not eaten very well and my body was ready for some real food!! Young Living oils are an important part of my daily routine...they have truly been life changing!! Happy Sunday, friends!!

Two minutes and two ingredients (plus ice) is all you need to whip up this pineapple cream shake. It's so yummy and nourishing too!

1/2 C. full fat coconut milk (shake can to mix cream)
3/4 C. Unsweetened pineapple & juice
A couple handfuls of ice

Toss in blender and blend on high for 30 seconds or until blended and creamy. Yum!! 😋

If you need a filling lunch that is packed with nutrition...this Mexican chicken bowl is for you! You can use a squeeze of fresh lime in the bowl, but if you have YL lime vitality oil...use it!! It really livens it up and gives a nice flavor punch! This is not a precise recipe so make any substitutions you like, but here's what I did...

Boneless, skinless chicken breasts - cut into pieces and season with garlic powder, cumin and sea or pink salt...cook in a little oil until done.

Zucchini and red onion - thin sliced and lightly sauteed

Black beans - rinsed and drained (can warm, but I didn't)

Fresh spinach - can saute, but I prefer to let the warm veggies and chicken lightly wilt.

Lime vitality oil - 2 to 3 drops or a squeeze of fresh lime juice

Avocado - I didn't have, but would've been a great addition.

Toss all ingredients together in a bowl, give another sprinkle of salt and a dash of pepper, if desired. Enjoy!

Hot blueberry cereal for breakfast... Yes, please! ☺ I cooked cereal in my rice cooker, but stove top works just as well. Makes 2 to 3 servings.

1/2 C steel cut oats
3 TBSP quinoa
1 TBSP chia seeds

Water - follow directions on rice cooker or steel cut oat pkg. and add a little extra for adding quinoa & chia. Cook until tender and quinoa spirals.

Blueberries - stir as many as you like into warm cereal. Top with raw honey, milk of choice and a sprinkle of cinnamon. Enjoy!

One of my favorite side dishes is roasted beets and sweet potatoes. They just seem to go together. It can easily go from a side to a main dish by adding in some cooked chicken.

To roast ...peel veggies and cut into small chunks. Place chunks in a shallow baking dish, toss with oil, season with salt and pepper and bake until tender... approximately 40 minutes, at 400 degrees.

Sorry my photo isn't the best, but it tastes better than the photo looks and that's what's important! 😉

Let's talk salad, lol! For years I had the mindset that a salad was to be low fat and low calorie...which left it lacking in flavor and left me feeling hungry!! Thank goodness I finally learned how wrong that thinking is. Now when I think of salad I think of a big bowl full of healthy fat, protein, vibrant color, crunch and flavor. Everything you need to keep your belly full and your taste buds happy! Interestingly enough...once I started putting the right things in my salad bowl... I was able to ditch the dressing!

Here's just one example of my idea of a salad. I try to switch up the ingredients to keep it interesting. I'll be sharing some of my other favorite salad combos so stay tuned.

Sometimes life doesn't go as planned... Aside from my passion for real food and striving to obtain health naturally... I have a handmade business. What started out as a hobby turned into a little more than I had planned. It has kept me busy for almost two years! :) I've missed posting healthy recipes so I'm trying to be more organized and efficient and hopefully find time to share here as well. :) If you're still following along... How about a dairy free ice cream recipe to kick things off?! I came up with this one day when I was having a craving for a banana fudge pop... A childhood favorite! I used to love getting them from the neighborhood ice cream truck. Lol

Banana Pecan Ice Cream

1 C. full fat coconut milk
2 ripe bananas
2 TBSP coconut sugar
1 1/2 tsp vanilla
1/4 C. chopped pecans

Blend first four ingredients in blender on high until smooth. Stir in chopped pecans. Pour mixture into a freezer container and freeze until firm. Enjoy! Makes 2 servings.

To eat right away use frozen bananas or add ice and blend on high and drink like a shake. :)

If you're waiting for my recipe for healthy cookie butter...it's coming! I hope to whip up a batch tomorrow, but for now I have something else I feel I need to share...

About a week ago I started getting a tingling sensation on my eyelid and around the outer corner of my eyes. My eyelids were a little red and my eyes were watering very slightly. I kept thinking I had rubbed my eyes too hard and irritated the skin. However, it spread to the inner corners of my eyes and became very itchy and painful. It felt like a thousand hot needles poking me, it tingled, it burned, it itched like mad and my eyelids became very puffy as it spread across the lid. It looked a tiny bit flaky almost like eczema, but it didn't flake. I became very worried at that point and went to Google, oh yeah! After much reading I decided it was some kind of contact dermatitis...an allergen to something.

To get me through the night I did as one post suggested and went for my aloe vera plant. I cut open a piece and rubbed the gel on my lids. As it dried it tingled and I wanted to scratch, but then I got enough relief that I could sleep. It did bother me off and on through the night, but it was manageable.

I knew by the next morning the aloe vera gel was not going to clear it up, but only help with the symptoms. They till itched and burned. Rather than call the doctor I went to the health food store and got a bottle of colloidal silver...Oh my what a life saver!! With in an hour of spraying it on my eyes (it's safe for eyes and supposed to clear pink eye like none other) I could tell it was slowing the spreading and the itch was subsiding. I used it throughout the day and by evening I was so much better. This morning they barely tingled and by this afternoon they started feeling normal again. They are still red and have some healing to do, but they do not itch and are not painful.

Colloidal silver will be a staple in my medicine cabinet from now on. They say It helps with a sore throat, ear aches, skin conditions and on and on. After my experience with it... it will be one of my first go to remedies. I just had to share in hopes of saving someone else a trip to the doctor.

Disclaimer: I am not telling you not to go to the doctor. This is what worked for me, but we all react differently so use your own judgement. :)

I apologize for neglecting my page for so long. I've got so many irons in the fire and life just keeps one busy!! I do have several recipes I want to share with you in upcoming posts. One is my version of what I imagine (I've never had it) Trader Joe's cookie butter to taste like. I would have posted it today, but didn't take any photos the last time I made it. :/

For today I've got a quick side dish that's not really much of a recipe. I intended to add a little apple for sweetness, but forgot.

In a food processor shred ...1 small beet, 1 lg carrot, 1 C. fresh broccoli and a small piece of ginger. Transfer to a bowl and add the juice of 1 lemon and a 1/4 C. raw sunflower kernels. Chill for a few hours to allow flavors to meld.

1/2 can pineapple chunks in juice
1 banana
1/3 of a small beet and beet greens
1 small carrot
1 Tbsp chia seeds
1/4 tsp. cinnamon
raw honey to taste
ice

Place all ingredients in blender and blend on high until smooth. Enjoy!

Tropical Cream Shake...this is one of my all time favorite creamy shake recipes for two reasons... 1. Because it takes very few ingredients so it's super quick and easy to whip up. 2. Because it's so darn delicious!! Seriously, I could have one every single day. :) I've made this many times and never really measured the ingredients. The rough recipe is as follows:

Tropical Cream Shake

1/2 to 3/4 C. cottage cheese
1/2 can pineapple chunks with juice
1 banana
1 Tbsp. coconut oil, optional
ice - add until desired consistency

In a blender mix the first three ingredients until well blended. Add coconut oil and blend on high for several seconds. Then add ice and blend on high until thick and creamy. If you add ice and coconut oil at the same time, the ice will harden the coconut oil making it harder to blend in smoothly.
