Pop-up Recipe: Tiffany’s Tomato & Pesto Tart is coming to Birch this weekend!

Welcoming into the bakery , graduate of the prestigious Ballymaloe cookery school in Ireland and ‘Queen of Tarts’.

This colourful tart of locally grown vibrant tomatoes hides a delicate layer of pesto, atop a crisp flour puff pastry tart shell.

Available this weekend, by the slice at the bakery door (or whole tart by pre-order!)

Tiffany is the Creative and Content Director at Spinneys, an award-winning writer and editor, and not only steers innovative content at Spinneys, but is also involved in new product development. Tiff is a wizard in the kitchen – conjuring up delightful baked goods with puff and short crust pastries to sourdough breads and much more.

T55 fine flour for pastries, breads, cookies, noodles & cakes, in 1.5kg bags.

All the nerdy details: Wildfarmed are reinventing and revolutionising the way land is farmed, setting out to challenge the way crops are grown, not only producing a superior product but also saving our planet along the way. No pesticides, herbicides, fungicides.

Organically produced from wheat grown through regenerative farming. Wildfarmed flour is grown in a biodiverse system that leaves the soil teeming with life, naturally feeding itself but also capturing huge amounts of CO2.

Wildfarmed Superfine White Flour T55 is the finest of all the Wildfarmed flours. it's hugely versatile and works best in products requiring a finer texture such as pasta, pastries, noodles and beyond. Milled a little differently to the other Wildfarmed flours, using a process that splits the grain prior to milled which results in a very white and fine flour.

Birch Baguette:

100% sourdough, 80% hydration, slowly fermented - a work in progress for quite a while in our little bakery space.

To make sure they are enjoyed fresh; we bake twice - one for the early birds, and a second batch for the 9am club (available via the order food button in bio only).

We tested all sorts of shapes, recipes and designs for our baguette - all at once the most complex and simple of breads.

Essential evaluation criteria:

1. Can you tear it with your hands? Check ☑️
2. Can it hold its butter? ☑️ ☑️ check check
and
3. Can it hold a generous spoonful of peach & rose jam? ☑️☑️☑️☑️☑️☑️

Double toasted, glazed with Emirati wildflower honey & sprinkled with sparkling flakes of sea salt. As always made with wheat & layers and layers of french butter.

We are all 🌿🍀🍃 green at the bakery for our September specials:

1. Green Herbs, Garlic & Olive Focaccia
2. Pistachio & Cashew Nut Butter
3. Zucchini & 12 Greens Focaccia
4. Pistachio & Orange Blossom Babka Buns
5. Zaatar & Sesame Sourdough 🍃

All made with incredible wheat from (except the nut butter; which is made with only roasted pistachio & cashew).

7am to 3pm daily, with coffee. Pick up, or order for delivery via the button in bio 🍀🌻

Muffins & Brownies are outta the oven! 3 new recipes on the list:

1: Blueberry, Thyme & Lemon muffin (with a super crisp crunch top - take a peek at the bright batter in pic 2!).

2: Walnut, Dark Chocolate & Sea Salt muffin: a no-sugar added recipe, with wholewheat, the darkest of Mirzam Choc and lots of crumbled walnuts.

3: The Birch Brownie: need we say more? Probably not, but we can’t be stopped!

We recently spent some time wandering through fields, to understand from the soil up; where our flours are grown.

At the beyond organic farms; soil health and biodiversity come first, planting together cereals and legumes, and allowing pest and w**d populations to sort themselves out.
