“Leftover” salad. I love using up extra food in a salad meal. No need to waste bits and pieces. A few days ago, I made homemade falafel and had leftover pickled onions, chopped tomatoes and cucumbers, Romaine lettuce, tahini sauce, and falafel rounds. The color of health! What I love about summer is the harvest of so many colorful fruits and vegetables. This is today’s purchase from my local organic farmer.
Phytonutrients: these vegetables here are full of them.
What are phytonutrients you ask? There are over 4,000 compounds in this broad category of nutrients. Some you may have heard of are flavones, carotenoids, catechins, polyphenols, antioxidants, and more! The bigger variety of foods you eat, the more of the compounds you get.
What do they do? It depends on the type, but in general they support your immune system, vision, cognition, bone and skin health, protect against cancer and heart disease, lower inflammation, maintain normal blood pressure, maintain good joint health, and optimize hormones to name just a few of their physiologic effects.

Just passed a massive Texas cattle feed lot operation. No grass or room to roam for these cows.
They eat GMO corn producing an inflammatory meat product compared to grass fed free range cattle. Feed lot meat is the majority of what you find in grocery stores and restaurants. It’s cheaper than grass fed meat, but not when one considers health effects after years of eating beef like this. If you do eat beef, read labels: grass fed better option and minimize your intake.
