Falafel is a great make ahead meal as it takes it a bit to make, but easily warmed up!

Also very versatile as to how you can eat it. Have it with rice, with salad, a gf wrap like Amanda did and then you can top it however you like.

I have a great baked recipe and dressings to go with it. Just DM me for details.

Happy new year everyone!

Back to weekly routines.

I always make Amanda and myself breakfast egg white muffins ahead of time for the week. This makes the mornings an easy grab and go.

Sometimes the kids even dig into theae.

These are naturally gluten free and I usually add one meat, one vegetable and one cheese. Usually some sort of leftover we have in the kitchen.

This time I am using the last bits of the charcuterie board we still have. So some sausage and boursin cheese were added.

I set the oven to 350 and put the timer on for 20 minutes to automatically turn off and just let them stand an extra 10 minutes after the oven turns off.

New year's eve finger food party platter ideas.

A great discussion happened in the Gluten Free Edmomton support group that prompted this post.

What can you put out for little gluten free bites?

Here are some ideas:

Costco:
✅Pinty's gluten free Buffalo nuggets
✅Brazi Bites
✅Oggi's gluten free pizza. Baked and cut into strips for pizza bites
✅Chicken wings. Baked or air fried. Get a bottle of VH honey garlic sauce and thicken with corn starch to use a dipper or toss wings in.

M&M Markets
✅Gluten free meat balls with your fav gf BBQ sauce
✅Gluten free cod bites
✅ Gluten free Skewers
✅They also have a gluten free dessert tray

Bens Meats
✅GF Spring Rolls. I recommend frying them in oil for a platter. But baked will work too.
✅GF dumplings. Serve with gluten free GF soy sauce for dipping (VH brand is recommended)
✅ All sorts of gf sausages to cut up and serve

Superstore
✅Carrots and Celery for some veggies. Dip with Renee's chunky blue cheese dressing
✅You can buy gf blue menu meatballs here instead of MM
✅You can buy the VH sauces from here as well as sweet baby rays BBQ sauce
✅ Presidenta choice gluten free Bruschetta flat bread
✅Sardo Olive Bruschetta served on your favorite gluten free cracker. Mary's would make a good cracker for this.
✅Marc Angelo skewers are gluten free
✅PC gluten free breaded shrimp (someone reminded me in the comments)

Round 2 of

I had so much left over from the first board we made, I had the kids plan out a second board for today.

I helped a little, but eventually stepped back and let them go.

I had them draw out their ideas on display first and then merge their ideas through compromise. I really likes that they made a mirror board this time to cause less reaching. My board had is all over the place.

Merry Christmas to all that celebrate!

Last night we put together a charcuterie board. We picked up all the cheeses, meats and fruit from the Italian Centre Shop Ltd. during all the holiday madness.

I used the gluten free seeded Mary's crackers from Costco.

I have to give the charcuterie artists all the credit in the world, because this was hard. I think mine looks decent, but no where near how it looks when we have ordered one from a professional.

Last night, our best friends decided to make dinner for us. Between both our families, we have enough food allergies and sensitivities to understand how to cook for eachother. It's really great having good friends like that.

It is their tradition to eat fish before Christmas, so they made us their kids favorite fish meal, a Portuguese Cod Fish Casserole and it was so delicious. Our kids dove in for second without hesitation.

The tastes and aroma had me at home with my parents for Shabbat dinners on Friday where they would always order Portuguese chicken.

I know in the Gluten Free Edmonton Support Group on Facebook, people are always looking for the KD shaker to make their own gluten free KD with gf pasta.

This Gold's Duck Sauce has become our favorite sauce for chicken.

I dredge the chicken in gluten free panko from Kinnikinnick Foods , then fry up the butterflied chicken in oil. Then pour the sauce over the cooked chicken and finish off in the oven for 10 minutes at 350 degrees.

This sauce can be found at Andy's IGA in the west or some kosher aisles at your closest grocery store.

They have a sweet and sour and this one adds some hot and spicy to it.

Can also be used as a dipping sauce.

For those new to following us, we call this BBQ salad.

✅Half the Romain
✅Drizzle with olive oil
✅Sprinkle with your favorite gluten free Montreal steak spice or just salt and pepper
✅Place face down on heated BBQ grill for 5 minutes.
✅Remove and drizzle with some lemon juice.
✅Add gf croutons (we often just make our own)
✅Add parmasean flakes

And voila!

When in doubt, make a sheet pancake!

We make sheet pancakes when we don't really know what type of pancake to make.

I winter for a seasonal theme for this one. From top row to bottom:

Snow: shredded coconut

Hot chocolate: chocolate chips and marshmallows

Apple cider: cooked apple with cinnamon and vanilla

Gingerbread, tasty Christmas treat: cut up gluten free gingerbread from Rio Vida Gluten Free bakery.

Jelly donut, tasty Chanukah treat: cut up gluten free donuts from Rio Vida Gluten Free bakery, topped with strawberry jam.

What would you put on a sheet pancake?

Btw, we use the Kinnikinnick Foods mix, and their mix has improved so much over the past year. This came out so fluffy and delicious!

Yesterday I went into to order some gluten free Donaire hand pies, and came out with a couple extra treats to try.

She gave us some gluten free fruit tarts to try which look so good and well stuffed. One is strawberry and one is apple. She also gave us a gluten free gingerbread cookie to try.

Before we left, she wished us happy Chanukah and gave us some gluten free donuts for Chanukah so we can stuff then with some jam to turn them into a traditional Chanukah treat called a sufganiyot.

Last night we celebrated the second night of Chanukah with some traditional foods including latkes (a potato pancake).

Fried foods are traditional during this time as cooking with oil represents the small quantity of oil used to light the menorah in the destroyed Temple. The little amount of oil miraculously burned for eight days.

Amanda's mom also redesigned a Kinnikinnick birthday to celebrate Chanukah by scraping off the icing and adding blue fondant and using icing and candy to make a manorah.

Always a hit with the family and our kids actually eat vegetables!

We prepare hard boiled eggs, gluten free nuggets, garlic shrimp, peppers, olives, cucumber and some cheeses.

Yesterday we tried the gluten free Tikka Masala that we picked up from Costco.

It was really tasty. Enjoyed how tender the chicken was.

🌶️ Little spice warning. Had a little kick. But our kids still lived it. Just add some yogurt to cool it down if needed.

Another Epicure adventure.

This time Philly-style Cheesesteak.

Was delicious and loved by the kids (minis the veggies involved of course 😄).

Hardest part is cutting the steak really thin. Make sure you have a really good knife for cutting the steak thin.

I used a sirloin tip. But a flank steak would work too from what I read.

Our Christmas menu is now up on our website! You'll find your favourite Christmas goodies like butter tarts, gingerbread, nanaimo bars and so many more.

We will be accepting pre-orders until Thursday, Dec 14th and the last day to pickup your order will be Friday, Dec 15th. We will be open until Dec 23rd, but pre-ordering will not be available.

Celiac Edmonton is looking for volunteer leadership.

This is a great professional development opportunity and a way to support the Celiac Community. Amanda and I supported the board for many years after her diagnosis.

It not only helped us give back to the community in a meetingful way, but we met some great people along the way to share the journey with.

The association needs young energetic members to continue supporting the community over the years.

We were so greatful to have the association activities to connect with similar people and families going through the same experience.
