Hearty and wholesome Mutton Haleem!
This is a delicacy prepared by my mother after long hours of hard work.
Haleem, a culinary delicacy, is crafted through slow cooking a blend of mutton, lentils, and wheat in a large vessel over low heat for hours. This extended cooking time allows the flavors to meld together, resulting in a rich, creamy texture that offers a deeply satisfying experience.

Winter season is popular for two things for me - Christmas & Gajar ka Halwa!
Presenting the special North Indian style Gajar ka Halwa loaded with pistachios, almonds, cashews, raisins, khoya and ghee.
This is one of the quintessential winter recipes prepared every year in my family. This was made by my cooking guru and mother , an interesting fact is that I don’t like sweets but I love Gajar ka Halwa made by my Mom. Yes, I only eat it when it is made by my mom and not by anyone else, I too never attempt making it. Sort of sacred.
It’s Christmas season, so if you are not baking a cake, celebrate the magical holidays with Gajar ka Halwa like me 🥰

Shahaurjaan informed that he is coming home for Lunch, and with my ongoing wfh, I thought to quickly cook something tasty for him.
Here’s my humble attempt to create a new chicken recipe, I have named this as Badami Chicken as have used lots of almonds to make the base of the gravy. I served this with some Matar Pulao and Hot Phulkas!

Try this --> 'Pasta in Garlic Butter Sauce'
STEP 1
Boil pasta as per the instructions on the packet. I have used Spaghetti pasta here. Cook the pasta until al dente. Remove some boiling water in which the pasta is cooked and keep it aside.
STEP 2
For making the garlic oil, place the oil and the chopped garlic chips in a small saucepan over medium heat. Once the garlic is sizzling, cook for 2-3 minutes or until the garlic is just starting to turn golden at the edges and remove it off from the heat.
STEP 3
In a pan, add the butter, garlic and chilli flakes. You can also add veggies of your choice, I have used sliced mushrooms. Once the garlic / veggies has soften, add soya sauce and oyster sauce. Mix it and now add the pasta to this pan. Add the pasta water and cook until the water is absorbed by the pasta. Now add grated cheese (optional) and toss it well.
STEP 4
Serve the pasta and drizzle the garlic oil that we had prepared earlier. Also, to add a bit of crunch, you can sprinkle some chopped spring onion greens.
