Tonight's meal for sure!!!! This hearty Broccoli Chicken Casserole recipe is made with your choice of pasta, tender chicken and broccoli, and the most delicious creamy cheddar mushroom sauce. See notes above for possible ingredient variations too.
8 ounces uncooked pasta* (I used whole-wheat rotini)
1 large head of broccoli*, cut into bite-sized florets (about 1 pound of florets)
2 tablespoons butter or olive oil
1 small white onion, thinly sliced
8 ounces baby bella (cremini) mushrooms, thinly sliced
4 cloves garlic, minced
3 tablespoons flour
1 cup chicken or vegetable stock
1 1/2 cups milk
1 teaspoon Dijon mustard
1/2 teaspoon fine sea salt
1/4 teaspoon freshly-cracked black pepper
2 cups (8 ounces) shredded sharp cheddar cheese, divided
2 cups diced (or shredded) cooked chicken
INSTRUCTIONS
Heat oven to 400Β°F.
Cook pasta in a large stockpot of generously-salted boiling water until it is al dente. However, about 1 minute before the pasta is done, add the broccoli to the boiling pasta water and stir until combined. Drain both the pasta and broccoli, and set aside.
Meanwhile, heat the butter (or oil) in a large sautΓ© pan over medium-high heat. Add the onion and sautΓ© for 3 minutes, stirring occasionally. Add the mushrooms and garlic and sautΓ© for 5 more minutes, stirring occasionally, or until the mushrooms are cooked through.
Sprinkle the flour evenly over the onion mixture and stir until combined. Cook for 1 minute, stirring occasionally. Add in the stock, and stir everything together until most of the clumps are gone. Add in the milk, Dijon, salt and pepper and stir until combined. Continue cooking the sauce until it reaches a simmer. Then remove from heat and stir in 1 cup of the shredded cheese until it is combined. Taste and season with additional salt and pepper, if needed.
In a large 9 x 13-inch baking dish, combine the cooked pasta, broccoli, mushroom sauce and chicken. Toss until combined. Smooth the casserole out into an even layer.
Bake uncovered for 15 minutes. Then remove pan from the oven, sprinkle the remaining cheddar cheese evenly on top of the casserole, and bake for 10 more minutes or until the cheese is nice and melty.
Serve warm, garnished with extra black pepper and/or fresh herbs, if desired.

Yummy Yummy in my morning tummy! My recipe highlight is the Spinach Mushroom Breakfast Casserole. This easy vegetarian egg casserole with spinach, mushrooms, and goat cheese is the perfect breakfast or brunch and always a crowd pleaser!
Ingredients
1 tablespoon olive oil
16 ounces cremini mushrooms, sliced
4 cups packed spinach leaves
3 cloves garlic, minced
Kosher salt and black pepper, to taste
2 green onions, sliced
4 ounces goat cheese, divided
18 large eggs
1/2 cup milk
Freshly chopped chives for garnish, optional
Instructions
Preheat oven to 350 degrees F. Grease a 9Γ13-inch baking dish with nonstick cooking spray and set aside.
In a large skillet, heat olive oil over high heat. Add the sliced mushrooms and cook until tender, about 3 minutes.
Stir in the spinach and garlic. Cook for 3 minutes or until the spinach is wilted. Season with salt and black pepper, to taste.
Pour vegetable mixture into the bottom of the prepared pan and spread out evenly. Sprinkle sliced green onions evenly over the vegetables.
Crumble half of the goat cheese over the vegetables.
In a large bowl, whisk together the eggs and milk. Season with salt and black pepper, to taste.
Pour egg mixture over the veggies and cheese. Crumble the remaining goat cheese over the eggs.
Bake for 30 to 40 minutes or until eggs are set and slightly golden around the edges.
Remove from oven and let cool for 5 minutes. Garnish with chopped chives. Cut into squares and serve warm.

Not being able to get to the gym post baby has not been a problem at all. I have been utilizing my good old buddy YouTube. To get my days started, I have tuning in to Juice and Toya for a good HITT workout. Most of their workouts are only 20-30mins. THAT'S IT! Whoever told you that you need a long and exhausting workout lieeeedddd to you.

Welpppp! It's the 1st and here it isπ₯. The 30 Day Challenge starts today or tomorrow (31 days in July). I am adding this in my routine before I hit the shower.
I am still doing my TLC energy pack of Nutraburst, NRG and SeaMoss. Unfortunately, I am still pumping that liquid gold so still no detox tea for meπͺ. But if you have it---Let's go! Cause thats promoting up to 5lbs off a week! 20lbs in one month sounds good to meππΎ.
