I am honoured to join A show that has been around for 18 years, the only HK production that can be enjoyed in both English and Cantonese.

In this season I will introduce you to some of my chef friends. I always say good food is when a cook shares their stories with you and you share those stories with others. This is what we aim to convey.

【「聖誕營廚教煮系列」燕麥脆皮爆汁焗雞🍗✨ 】x 星級「營廚」Christian Yang👨🏻‍🍳

聖誕焗雞有咩咁特別啊?桂格今次「脆」味十足🤩,將燕麥融入聖誕大餐嘅主角焗雞,打造Super Juicy 又 Super Crunchy 、營養滿分嘅節日菜式🥰!

為迎接聖誕佳節🤩,「桂格營廚教煮系列」第二集將由星級「營廚」Christian Yang👨🏻‍🍳為大家發明全新聖誕食譜 「燕麥脆皮爆汁焗雞」,用🌟 #原片燕麥 同🌟 #快熟燕麥 製成脆度💯分嘅燕麥脆皮,鎖住juicy肉汁!包你入口雞肉嫩滑,啖啖有「脆」🤤!今個聖誕一於輕鬆煮出新意,俾啲驚喜屋企人朋友🎉,睇完整短片學整啦😎!

👉🏻預備材料
燕麥脆皮材料:
1茶匙黑胡椒
1茶匙鹽
500克麵粉
400克快熟燕麥
100克原片燕麥
室溫狀態100克牛油
已打發雞蛋4隻

焗雞部分材料:
全雞1.2公斤
半茶匙細鹽
半茶匙紅椒粉

醬汁部分材料:
1公升雞湯
1茶匙喼汁
少許鹽及黑胡椒
50-85克固體牛油

Chicken:
1 whole chicken (1.2 kg)
1/2 teaspoon fine salt
1/2 teaspoon paprika

Oatmeal Crust:
1 teaspoon Black pepper to taste
1 teaspoon Salt
500g Flour
400g Quick oats
100g Whole rolled oats
100g butter, softened at room temperature
4 eggs, beaten
1-2 eggs for brushing

Gravy:
1L Chicken Stock
1 teaspoon Worcestershire sauce
50-80g Cold butter, cubes
Black pepper for taste

Salad:
Your choice of salad and dressing

Preheat the oven at 160C without fan.
Make the oatmeal crust by mixing all the ingredients together and then kneading roughly 5-8 times so that the dough comes together as one. Then roll it out onto a large piece of baking paper.
Season the chicken with some salt and paprika.
Fold the oatmeal crust onto the chicken and seal the seams. Brush some beaten egg onto and wrap with the baking paper.
Bake for 60 minutes. Then unwrap the chicken, turn on the oven fan and allow to bake at 160C for another 10-15 minutes.
Allow to cool at room temperature for 10 minutes before cutting open.
Make the gravy by boiling the chicken sock until it’s reduced to 1/4 of it original volume. Switch off the heat, season with Worcestershire sauce and black pepper. Then add the cold butter cubes and allow to melt gently. This can be done when the chicken being baked.
Serve the chicken with some crust, the gravy and a salad.

巨型羊架煲仔飯
Cumin Lamb Chops Cumin Clay Pot Rice

2 Lamb racks2羊肉架
Salt 鹽
White pepper powder �白胡椒粉
Cumin powder �孜然粉

�結皮成分 / Crust ingredients:
Cumin �孜然粉
Roasted Garlic 烤大蒜
sesame oil �芝麻油
Sesame seeds 芝麻
breadcrumbs �麵包屑
Coriander 香菜

Brush Marinade:
Light Soy 輕質大豆
Dark Soy 黑大豆 �Yellow bean sauce 黃豆醬
Shaoxing Wine 紹興酒 �
Topping:
Dried Chili flakes 乾辣椒片
chopped spring onions 蔥花碎
coriander 香菜
��Rice:
1.5 cups rice, washed 1.5杯米飯,洗淨
3 cups water 3杯水
Dark soy sauce 老抽醬油

Instructions:
Preheat oven to 180°C (fan)
Season lamb with a little salt and pepper and generous amounts of cumin.
Heat a pan over medium high heat and sear the lamb and garlic. Place lamb onto a baking sheet.
Remove garlic and add to food processor with along with the crust ingredients until combined. Pour onto a large plate.
Brush the top and sides of the lamb with brush marinade. Coat the top and sides of the lamb with the breadcrumb mixture and roast in oven for 15-20 minutes.
Cook rice in the clay pot for 20-25 minutes.
Remove from heat. Place the lamb on top of the rice with a raw egg, add some dark soy sauce mixed with any liquid from the roasting pan and cover for 5-6 minutes. Garnish with chili flakes, spring onion and coriander.
Slice the lamb and serve.

Epic day of chill spent with my #1 ❤️ favourite .

Got to play some tennis, and also witness my favourite WTA Ons Jabeur and ATP Nick Kyrgios get some W’s at the US Open. Nice lunch at my usual birthday spot at Spices at Repulse Bay (great service and good food). Then a much needed massage, Bullet Train starting my favourite Brad Pitt, home with my favourite kids to cut this epic Cake of my favourite food. Epic lunch yesterday at my favourite pizzeria .hongkong and grabbed a snazzy picture with my favourite chef and the night before with my favourite parents and yayah ! overall a real nice one.

Thanks to all you legends who wished me happy birthday. Wishing you as much joy as I possess. 多謝大家
