Basically all the elements of a cheeseboard on toast - cheese, fruit, nuts and a little something sweet to finish it off! Here we have grilled sourdough toast topped with creamy burrata cheese, a little salt, pepper, a drizzle of olive oil, sweet and spicy candied pecans, sliced figs, a little fresh rosemary and a drizzle of hot honey. Wow what a mouthful 🤩 It’s the perfect autumnal toast to enjoy while the figs are at their peak! I did not grow up using a kitchen scale, but when I moved to the UK I got one and I’ve never looked back - they are a total game changer for baking and cooking. They are an inexpensive piece of kitchen equipment, there is less mess to clean up because you measure right into the bowl and they ensure absolute precision when following a recipe (this is especially important with bread!). I totally understand why people try to convert my dough recipes to cups though - if you don’t have a scale, you don’t have a scale! Or maybe you don’t know how to use one and feel intimidated by it so don’t want to buy one - I totally get it. I wonder if it would be useful to show how to properly measure flour with a measuring cup to ensure the measurement is as close as possible to what it should be? The different methods people use to measure flour with a cup can mean the measurement could be more than 80-100g off of what it should be when making a loaf of bread. This will totally impact on the end result! 🤯 Or would it be helpful to anyone to have a little tutorial on using a kitchen scale? Camembert, Fig + Caramelised Red Onion Grilled Cheese 🧀 Please try this while figs are in season! Pile on Camembert, sliced figs, caramelised red onions and thyme into some sliced sourdough bread. Cook over medium low heat in an olive oil coated frying pan until the cheese is oozy, the bread is golden and crisp and the figs/onions on top are starting to warm through. Low and slow is key here! Once out of the frying pan, drizzle with hot honey, slice in half and enjoy every bite of this savoury and sweet sandwich! You can also use onion jam in place of the caramelised red onions if you wish to do so. You can also use Brie or any other soft and melty cheese you love. It’s free to view my recipes, you just need to create a login to do so 😘 You can use any of my base focaccia dough recipes to make this (click the FOCACCIA TUTORIALS button above my grid for these). Here is the basic how-to, all the details/measurements/instructions on how to caramelise onions are in the written recipe… 🧅 Make the focaccia dough, about 30/40 minutes before you plan to tip the dough into the tray, start on the onions (they take a while - low and slow is key!) 🧅 Caramelise five medium onions, grate a ton of Gruyère/cheddar/mozzarella/emmental (whatever you prefer). Set the onions aside to cool off. 🧅 Tip dough into tray, add in 1/3 of the cheese and half of the onions and fold up/flip dough as shown. 🧅 Proof for 1-2 hours and then parbake at 220C/430F for 12 mins. Remove from oven and add additional cheese and onions and black pepper. 🧅 Return to oven for an additional 10 minutes or until cheese is starting to turn golden brown. Whole Wheat Focaccia 🌾 So many of you have asked if you can use whole wheat flour for focaccia dough, and the answer is YES! You just need to up the water content because whole wheat flour absorbs more water than white bread flour does. You also need to adjust the timeline slightly as whole wheat dough tends to ferment quicker too! You do need to adjust your expectations of the results when working with 100% whole wheat flour - the focaccia will be slightly denser, a little less crispy and will normally have fewer bubbles inside. It will still be absolutely delicious though - nutty, squidgy and satisfying! A little teaser for my next #breadhack! Believe it or not, this loaf of bread was made using my Easy Same-Day Focaccia dough (instant yeast)! This deliciously crusty yet springy loaf of bread was made from start to finish in 3 hours and 15 minutes 🙌🏼 The key is baking the loaf in a cast iron pot/Dutch oven which helps to mimic the type of steamy environment you’d find in a commercial bread oven. This allows the bread to rise to its full potential and creates a fantastic crust 👌🏻 This loaf is perfect for toast, sandwiches, French toast or simply torn into fresh from the oven and slathered with a slab of salted butter! This is just a little teaser but the full tutorial is coming next week. Replying to @Whatshereffingname Measurements Detailed written recipe is linked in my bio, but here are the basics 👇🏻 🍞 For the dough 390-420ml warm water (13 -14 fl oz) 1 teaspoon (5g) honey, sugar or agave 1 Tablespoon (15ml) extra virgin olive oil 1.5 teaspoons (6g) instant yeast 500g white bread flour* 2 teaspoons (10g) fine sea salt *this equates to 3.8-4 cups of flour if measured correctly. Fluff flour first, spoon into cup and level off. Scales are always most precise! 🧄 For the garlic butter 2 Tablespoons (30g) salted butter 2 Tablespoons (30ml) extra virgin olive oil 10 cloves garlic, finely minced 2 Tablespoons flat leaf parsley, chopped Salt to taste if needed 🧄 Simmer on medium low for 2 mins. Set aside to cool. 🧀 210g/ 1 3/4 cups grated mozzarella Freshly grated Parmesan to garnish ▫️Use a metal baking tray, 9x13 inches or slightly bigger. Line with nonstick parchment and coat with extra virgin olive oil. ▫️Mix dough. Cover and rest 15 minutes. Stretch and fold. Cover and rest 15 minutes. Stretch and fold. Cover and rest 1.5 hours (room temp) and then tip dough into oiled tray. ▫️Spoon 2/3 garlic butter onto dough (use more of the garlic bits and less of the liquid butter for stuffing). ▫️Sprinkle half of the cheese on top of the garlic butter before folding the dough up into a burrito-like shape and flipping over. Cover and proof at room temp for 1.5 hours. ▫️Preheat oven to 220C/430F and place rack in lowest position in oven so the bottom of the bread gets crispy. Once proofed, drizzle with extra virgin olive oil, dimple and bake for 15 minutes. Remove from oven and add the rest of the cheese and bake for another 8-10 minutes. ▫️Once out of the oven, brush on the rest of the garlic butter and a sprinkle of Parmesan. Makes 19-20 mini focaccia Ingredients: 1 batch of overnight, same-day or sourdough focaccia Extra virgin olive oil to line tin and drizzle Flaky sea salt 2x standard 12 portion nonstick muffin tins Instructions: Prepare the focaccia dough as instructed in the recipe. Instead of lining and oiling the tray as it says to in the recipes, you’re going to liberally brush each compartment of the muffin tin with extra virgin olive oil. Tip the dough onto a lightly oiled surface. Using a dough cutter or knife, cut the focaccia dough into 50g portions. Plop each dough blob into an oiled compartment. Cover muffin tin with another tray (inverted) and let proof for about 1.5 hours. The dough should have puffed up to the top of the compartment. If you’re using the same-day focaccia dough, this may only take an hour - there is more yeast in that dough and it’s not been refrigerated so it will rise more quickly. While the dough is proofing, prepare your toppings. The beauty here is you can try a ton of different flavour combos in one batch - a great way to taste test before you commit an entire tray of focaccia to one flavour! Preheat oven to 220F/430F. Place rack in bottom position of oven - this helps the base of the mini focaccias to get crispy and prevents the toppings from burning. Drizzle the dough with a little olive oil and then dimple it using two oiled fingers (dimple 3-4 times for each compartment). Now add the toppings onto the dimpled dough. The mini focaccias will dome up they bake and the toppings can get pushed off, so really push the toppings deeply into the dough. Finish with a little more olive oil and flaky sea salt. Bake on lowest rack in oven for 18-20 minutes or until golden. Allow them to cool for 5 minutes in the muffin tin, and then remove to finish cooling on a rack.
