Smoked Turkey

Prep: Thaw turkey in advance.

Most commercial turkeys are brined already, but if it is local, or organic, Brine 24 hours overnight.

On cook day, clear out all the packed parts (gizzard, etc) and rinse the entire bird with HOT water to tighten the skin pat dry

Use a 50/50 mix of coarse pepper and coarse kosher salt (don’t skimp)

you can add onion halves and sliced citrus inside the bird to increase the moisture and sweeten the flavor

Heat smoker to 300-325.

Probes in breast and thigh

The bird should be placed on the smoker with the legs facing the hot side. (Thighs need more heat) Use a bowl inside to keep the moisture up (fill with water)

When the thigh hits 155-160 I move the bird to a foil tray, add 1 lb of cubed softened butter, and tent the entire thing in foil and it goes back on the smoker. I want the thighs to be 180, and the breast to be 165.

Pull and rest for 30 mins. Carve, then eat.

This should take 2-3 hours to cook for a medium-sized bird
