Super easy Paleo dinner last night with yummy leftovers for lunch. Rayce was too full from Pho.
Cut sweet potatoes in small cubes adding halved or quartered cremini mushrooms and season with 1-2 tbs avocado or healthy oil of your choice, season with salt & pepper. Place in 400 degree oven on foil or cookie sheet for at least 20 mins.
Roll Lacinato kale like a cigar and cut into strips - in med size bowl drizzle oil & massage kale til softened adding a chopped cherry tomato, seasoning with Himalayan salt and fresh cracked pepper.
2 half organic chicken breasts seasoned w/ orange chili spice, drizzle 1-2 tbs of avocado or healthy oil of your choice and put in med high pan with oil about 6-7 mins before squash is done, giving a slight sear. When done slice on cutting board into strips.
When sweet potatoes are done add that and mushrooms to bowl of kale and toms adding about 2 tbs cilantro cider vinaigrette with healthy oil. Make from scratch or buy.
Place one chicken breast on half of the kale/squash mixture and drizzle cilantro cider vin over it.

Creminis: Copper, Selenium, Phosphorous
Tomatoes: Lycopene, Vit C, Potassium, Folate, Vit K

“Self-care is often a very unbeautiful thing.
It is making a spreadsheet of your debt and enforcing a morning routine and cooking yourself healthy meals and no longer just running from your problems and calling the distraction a solution.
It is often doing the ugliest thing that you have to do, like sweat through another workout or tell a toxic friend you don’t want to see them anymore or get a second job so you can have a savings account or figure out a way to accept yourself so that you’re not constantly exhausted from trying to be everything, all the time and then needing to take deliberate, mandated breaks from living to do basic things like drop some oil into a bath and read Marie Claire and turn your phone off for the day.
A world in which self-care has to be such a trendy topic is a world that is sick. Self-care should not be something we resort to because we are so absolutely exhausted that we need some reprieve from our own relentless internal pressure.
True self-care is not salt baths and chocolate cake, it is making the choice to build a life you don’t need to regularly escape from.
And that often takes doing the thing you least want to do.
It often means looking your failures and disappointments square in the eye and re-strategizing. It is not satiating your immediate desires. It is letting go. It is choosing new. It is disappointing some people. It is making sacrifices for others. It is living a way that other people won’t, so maybe you can live in a way that other people can’t.
It is letting yourself be normal. Regular. Unexceptional. It is sometimes having a dirty kitchen and deciding your ultimate goal in life isn’t going to be having abs and keeping up with your fake friends. It is deciding how much of your anxiety comes from not actualizing your latent potential, and how much comes from the way you were being trained to think before you even knew what was happening.
If you find yourself having to regularly indulge in consumer self-care, it’s because you are disconnected from actual self-care, which has very little to do with “treating yourself” and a whole lot do with parenting yourself and making choices for your long-term wellness.
It is no longer using your hectic and unreasonable life as justification for self-sabotage in the form of liquor and procrastination. It is learning how to stop trying to “fix yourself” and start trying to take care of yourself… and maybe finding that taking care lovingly attends to a lot of the problems you were trying to fix in the first place.
It means being the hero of your life, not the victim. It means rewiring what you have until your everyday life isn’t something you need therapy to recover from. It is no longer choosing a life that looks good over a life that feels good. It is giving the hell up on some goals so you can care about others. It is being honest even if that means you aren’t universally liked. It is meeting your own needs so you aren’t anxious and dependent on other people.
It is becoming the person you know you want and are meant to be. Someone who knows that salt baths and chocolate cake are ways to enjoy life – not escape from it.”

Oh boy if this isn’t a clear representation of my life right now. 🙄 I’m a firm believer that little happens to us that is totally out of our control. Yes, there are exceptions and this post isn’t meant to demean those events which often bring sadness and despair. What I mean is that in not paying attention, whether we are overwhelmed or grinding and only ‘paying attention’ to the absolute daily things that allow us to function - autopilot - we fail at other important life ‘things’. It’s important to recognize this and acknowledge it. Being hard and shaming ourselves isn’t beneficial; being real, owning it and making changes for the future IS beneficial. Break unhealthy patterns, whatever they may be. When you KNOW better, DO better! Most importantly, don’t forget to implement healthy activities and nutrition to fuel your body, mind & spirit when things get tough. 😘

✨To the others...nitrate/nitrite/hormone-free spinach gruyere chicken sausage (one link), 2 organic eggs, 1/2 avocado & a small sweet potato seasoned with black pepper, garlic powder and red pepper flakes. Tiny bit of sour cream (in place of sharp white cheddar - my fave!) & topped with sriracha! You could easily sub a sriracha mixed with plain yogurt or tzatziki sauce if you wanted to be a bit healthier. 💪🏻
✨I primarily eat clean and could likely cut out the small amount of toppings/sauces that I use on occasion but what’s the point of being dedicated to fitness if you can’t indulge once in a while?! I definitely find that the more I eat healthy the less my body craves any of the crap. And I’m acutely aware of what the crap feels like when it goes in very occasionally. After all you are what you eat. 🥗
Don’t be irrelevant in your own life. Let the fear of the unknown challenge and propel you in all areas, on all levels. You will never know what’s waiting for you behind that unopened door unless you knock. 👊🏻💯🙌🏻

I have to share this shout out from my sister friend and coach. A teammate is struggling with consistency and staying committed. I think we all struggle with this now and again. If it’s a pattern or the rule, as opposed to the exception, dig deep to uncover why you’re not prioritizing your health and wellness. And always surround yourself with people that will help hold you accountable. 😘

💫Sautéed chicken breast in organic coconut oil with cracked pepper, pink Himalayan salt, & kickin’ chicken seasoning. Added mushrooms and asparagus to the pan and voila! 🐓 🍄
💫This took 15 mins (for the quinoa to cook) and will make my life so much easier the next couple days. Preparation is the key to implementation and success! 🔑

GINGERADE ENERGY BITES
1 Cup Unsalted, Roasted Cashews
½ Cup Shredded Unsweetened Coconut
4 Tbsp. GT’s KOMBUCHA Gingerade
1 Tbsp. Chia Seeds
4 Pitted Dates
2 tsp. Orange Zest
1 tsp. Vanilla Extract
Pinch of Sea Salt

Directions: Mix GT’s KOMBUCHA Gingerade with all other ingredients in a food processor. Mix well. Spoon out one heaping tablespoon of the mixture and roll into a small ball. Arrange the balls on a baking sheet and place in a refrigerator to chill for about 30 minutes. Snack away!

💫I’m kicking off my weekend with a 3-day Refresh and diving into a fun, butt busting workout (Fusion/Piyo) with some amazing ladies on Monday for the next 60 days. SIXTY. DAYS. 1/6th of my year is planned and in motion with loads of dedication to my health and fitness.
💫I could start on Monday but that would mean that I come from a mindset that there’s only ONE day to make a commitment or start something. I’ve never been of that mindset, although I do love me some Mondays.

Yoga....if you haven’t done it then you need to. Day 14 worked out every kink, sore spot...it’s pure magic. Trust me. I know things.
If anyone wonders what procrastination looks like it’s this. Double workouts for skipping my Friday workout PLUS putting in my 3rd day of 12 Days of Fitmas. My intention was to do it as soon as I got home yesterday, but...given the chance my squirrel brain will do a million other things or nothing at all. And while I could have pulled a double tomorrow I decided to knock it out today. And because I always like to leave things on a positive this is also a picture of commitment...to myself! 💪🏻❤️🙌🏻
