Breakfast recipe! Made this amazing puff pastry just egg quiche this weekend. Super easy because my amazing husband had made the vegetable filling the night before for dinner and I just repurposed leftovers, lol. 😁

I added some salt and pepper, nooch, fresh basil, etc. Pretty easy to use whatever flavors you want!

This has been spoken about in the community for a while, but it's nice to see a study confirming that the theory of "meat made us human" does not necessarily have any basis in reality.

Beware the vegan police. 🚓
I offer my sincere apology to the vegan police and community of people who were sick on the day they taught reading comprehension in school for yesterday pulling into McDonalds on a road trip. With no other options in sight, let alone dedicated vegan restaurants on this particular strip of remote highway, I callously ordered a hash brown with sauce sloppily sandwiched in bread and announced it as a brand new collaboration between McDonalds and I to introduce plant based options to the menu. Never could I imagine that this very authentic and real brand deal would hurt so many and call into question my credibility as a true vegan.
Today, luckily, the strip of highway’s sole offering was instead an Oliver’s which has a dedicated vegan breakfast burger on the menu - phew! Perhaps I could redeem my credentials this time around? There was a hash brown inside, a concept that we all know I personally came up with when working directly with McDonalds yesterday but I won’t comment on the upcoming legal proceedings. It gets worse, though.
As I chowed down, my heart sank to notice despite having vegan options, Oliver’s also was selling bacon and egg muffins. Oh no! Right after I’d been informed by the vegan police that purchasing vegan food from non-vegan places was a crime. I could practically hear the sirens. I confess this in an attempt to atone for my sins. To bring awareness to other vegans that if you’re in a situation where you can’t attend a dedicated vegan restaurant, purchase food exclusively from 100% vegan supermarkets (as the vegan police clearly do), or home cook yourself a meal from the passenger seat of a vehicle - there is only one true solution for real vegans.
From now on, it’s not enough to not eat animals, it’s time I walk the talk. I’ve informed McDonald’s our collaboration is cancelled and now for my road trip breakfasts I’m resolving to heroically starve to death (for the animals).
