As summer unfolds and Tennessean trails beckon, many of us reach for the familiar comfort of trail mix. Inspired by this classic combination of chocolate, nuts, and fruit, weβve crafted a unique coffee blend that captures those well-loved flavors in a cup.
The foundation of βTrail Mixβ is a remarkable honey-processed Caturra from the Aponte Village in Colombiaβs NariΓ±o region. This coffee originates from an indigenous farmer cooperative dedicated to collective improvement. They oversee the entire process, from cherry to green bean, ensuring exceptional quality.
For an exciting twist, weβve reintroduced a second coffee based on popular demand. Sourced from Jairo Arcilaβs Finca Santa Monica farm in Colombia, this lot reflects Jairoβs reputation as an experimenter. Heβs honed a unique anaerobic honey fermentation process using the Castillo varietal.
Jairoβs innovative approach doesnβt stop there. He incorporates green apples and wine yeast during fermentation, and further enhances the green apple notes during drying. The result? A coffee that truly delivers a taste of green apple.

We are pleased to announce the arrival of our latest Ethiopian coffees, showcasing the diverse flavor profiles this esteemed origin has to offer.
The first of these exceptional lots hails from the Mulish washing station, named after the smallholder community it serves. Established in 2014 by Faysel Abdosh and Testi Coffee, the coffees from this region have garnered such distinct character and quality that the Guji zone, previously encompassed within Sidamo, is now recognized as a unique growing area.
Mulish serves as a collection point for over 880 smallholder farmers, where meticulous processing techniques are employed under the direction of Mr. Abdosh and his team. Coffees are carefully sorted before meticulous drying on expansive raised drying beds exceeding 400 in number. Testi Coffee further oversees the dry milling and export of these exceptional beans.
Ethiopian natural coffees are prized for their vibrant mouthfeel and complex character. They often challenge preconceived notions of coffee flavor profiles. This particular lot presents a delightful interplay of citrus and berry acidity, with notes of ripe orange and a lingering sweetness reminiscent of cherries. The cup is further enriched by a hint of cocoa or chocolate, adding depth and body.

Coffee isnβt simply a commodity; itβs an agricultural practice passed down through generations. This philosophy is evident in our newest single-origin offering: Finca El Cerro, translating to βHill Farm.β
In 1972, Francisco Quinonez inherited El Cerro, inspiring a new chapter for his familyβs coffee legacy. His son, Alejandro, brings his agronomy studies to bear on the farmβs innovative approach to planting and maintaining diverse coffee varietals. Their dedication is a key ingredient in El Cerroβs success.
This coffee is part of a collaborative project with San Miguel, who empower small farmers through investments in advanced micromills for final processing. This specific lot underwent a meticulous 36-hour fermentation, followed by a washing stage and drying on raised African beds. This meticulous attention to detail unlocks a captivating depth of flavor in the final cup.
El Cerroβs offering is a 100% Washed Red Bourbon. The finished cup presents a mellow sweetness reminiscent of cocoa, culminating in a lingering black tea note. The balanced acidity echoes the brightness of blood orange. While this coffee shines in any brewing method, we find it particularly captivating as a pour-over.

This Halloween season, dare to try Monster Mash, a coffee so good, it's scary!
Made with a single origin Ethiopian coffee called Laayyoo, Monster Mash is a natural process coffee produced at the Raro Nensebo Drying Station in Uraga, Guji. Laayyoo is made up of cherries from 35 different farmers in the local βkabele,β with their farms sitting between 2,100 and 2,350 meters above sea level. Theyβve been able to identify their heirloom varieties as 74110 and 74112.
The processing at Saakoo Coffee is immaculate. They have strict roles about the depth of the drying cherries (3cm) and moving cherries around six times per day, which prevents development of overfermentation. Coffee is dried for no less than 21 days, up to 28 days.
What does all of this do to the finished coffee? A haunting explosion of flavor, that's for sure! When you first sip Monster Mash, you'll be greeted by a symphony of tart grapefruit candy, hibiscus, plum, and a yogurt like finish. It's a truly unique and unforgettable coffee experience.

Trail Mix -> Chocolate π« / Nuts π₯ / Strawberry π
Summer is in full swing, and many of us are spending our free time hiking and exploring the trails in Tennessee. It's no surprise that we often pack a bag of trail mix for our adventures.
Inspired by the classic trail mix combination of chocolate, nuts, and strawberries, we've created a new coffee blend that captures all of those flavors.
The base coffee in our Trail Mix blend is an amazing natural Yellow Bourbon from Fazenda El Paraiso in Brazil. This lot won first place in the last AMECAFE cupping competition, and it's rich, chocolatey, and clean in the finish.
We've added a second lot of coffee from several small farms in Risaralda, Colombia. The mix of terroir and varieties from these lots (Colombia, Castillo, Caturra) gives our blend a strongly round nutty body and slight floral complexity.
The final coffee in our blend is a little bit of a wild card. It comes from a producer named Jairo Arcila and his farm Finca Santa Monica in Colombia. Jairo is an experimenter, and he's been dialing in crazy fermentations for years. The lot that we chose is an anaerobic honey fermentation of a pink bourbon. Not only that, but Jairo added strawberries and wine yeast to the fermentation. He also adds MORE strawberries to the coffee as it dries. So, as you guessed, it tastes like strawberry coffee!
