Has COVID thrown your world for a spin? It has for most of us, and we're left walking out this spring, wondering how we can recover. Relationships look different, and so does our relationship with food. But now, more than ever, we need to fight inflammation and take charge of our bodies.

Eating healthy isn't always easy or convenient, but neither is a deteriorating body. As we walk through life, we have to decide how we're going to live. And now, more and more people are starting to take notice of alternative food options to the traditional "American diet". We are open to considering how food may be a contributor to our quality of life. We'll never be perfect, but there are a few things we can do to help.

One breakfast treat that my family enjoys instead of traditional muffins or biscuits are what I call my Plantain Muffies. Add a few chocolate chips, blueberries or cinnamon spice, and these are perfect for those morning pastries. We've even been known to use these for mini-pizza crusts on the weekends!

Don't know what a plantain is...just walk through the produce aisle for a minute and you'll find them. Just make sure they're ripe enough (with a little give in them), and your muffies will turn out fabulous every time.
