Paleo-Friendly Sweet Potato Hash with Sunny-Side-Up Eggs and Mixed Berries

1. 2 medium-sized sweet potatoes, peeled and grated
2. 4 large eggs
3. 1 ripe avocado, sliced
4. 1 tablespoon chia seeds
5. 1 cup mixed berries (blueberries, strawberries, raspberries)
6. Fresh parsley for garnish
7. 1 lemon
8. Olive oil or coconut oil for cooking
9. Salt and pepper to taste
Instructions:
1. **Sweet Potato Hash Browns:**
- In a medium-sized mixing bowl, combine the grated sweet potatoes with a pinch of salt and pepper.
- Heat a skillet over medium heat and add a generous amount of olive or coconut oil.
- Once the oil is hot, add the sweet potato mixture and press it down to form a flat layer. Cook for about 7 minutes until the bottom is golden brown.
- Flip the hash browns and cook for another 5-7 minutes until both sides are crispy and golden.
2. **Sunny-Side-Up Eggs:**
- In a separate skillet, heat a small amount of oil over medium heat.
- Crack the eggs into the skillet, ensuring they don't overlap.
- Cook for about 2-3 minutes until the whites are set but the yolks remain runny. Season with salt and pepper.
3. **Serving:**
- Place the sweet potato hash browns on plates.
