PLANT BASED SCRAMBLED "EGGS"
This breakfast idea came up when I tried the vegan omelette at the Gate restaurant which was made of tofu.
Tofu contains 8g of protein per 100g and is fat and cholesterol free. Because I used to eat eggs I can compare and it is lighter and easier to digest hence with bread it won't feel too much.
βœ… organic smooth tofu from βœ… olive bread 🍞 from
βœ…olive oil
βœ… paprika powder
βœ… Cayenne powder
βœ… black pepper
βœ… tomato / yellow pepper / spring onions
➑️ using a fork, mash the tofu on the toast of your choice (mine is olive bread).
➑️ micro wave for 1.5min
➑️ add the remaining ingredients to taste on top
πŸ’šif you do not want to micro wave scramble the tofu in a pan with coconut oil

I find it hard to make kids eating beetroots so I usually blend them in smoothies hidden with banana and broccoli (believe it or not: my kids love broccoli).
Tonight I am trying a salad with beetroot carpaccio (finely sliced cooked beetroots), white grapes, cherry tomatoes and cucumber that I will season with black pepper, mustard and olive oil (as a niçoise olive oil is my go to seasoning).
Look how beautiful it looks... I am sure they will not resist it ✨❀️

Trying to be good and need to much on a cake?
Here is my cupcake recipe to make you feel full and satisfied with benefits only πŸ˜‡
Ingredients:
150g ground almonds
4 tbsp of chia seeds
4 tbsp of oats
1 tbsp of coconut oil
1 handful of blueberries
1 mashed banana
1 tbsp of date syrup (optional)
2 cups of coconut milk

Soak the chia seeds in filtered water (add more water than chia seeds as they are going to absorb the water) till they form a paste (egg white like).
Mix all ingredients together with your hands and place them in individual cupcake moulds.
If the dough is too dry, add coconut milk. If it is too runny, add almond flour or oats.
Preheat and cook for 15 min at 190 degrees less or more depending on your oven.

Sometimes I want to eat something in the morning rather than drink so I make a thick creamy smoothie by adding avocado and peanut butter to my healthy mix.

Luckily I live not very far from work and school but both are kind of opposite direction. To save time in an ecological way my solution is to use a scooter. It is twice faster than walking and by alternating the pushing leg I train my lower body muscles at the same time.

BACK TO WORK, I was pleased to hear my colleagues positively comment on my silhouette and overall wellbeing

I brought my breakfast with me to fast 12h between the evening before and the morning. I mixed in a small glass jar **p protein powder, cocoa powder, and
Mid day I had a break and went to a body pump class but did not load the barre too much. Afterwards I had some salmon with greens and sweet potatoes to nourish the physical effort (not vegan but I decided to keep a bit of fish and eggs in my diet for now) small quantity though.
For my snack I drank my homemade smoothie: blueberries, coconut milk, chocolate protein powder and spirulina.
For dinner I just had a salad with mushrooms, broccolis, spinach and mustard.
And now as a treat I am having my favourite organic vegan lactose free ice cream from with only 4 ingredients: water, agave syrup, cashew nuts and cocoa πŸ˜›
Just need to (will last only 5 minutes as I feel the urge to sleep) and I will be ready for bed πŸ˜‡

We know water is an important part of our lifestyle, it hydrates, flushes, cleanses, beautifies, refreshes... And so much more.
Ideally I filter water and store it in glass bottles. Charcoal or evaporation are my favourite filters.
When travelling and especially in France it is not easy to find glass water bottles so I sometimes buy plastic bottles.
If water is your main drink you will start enjoying the different kinds of waters and their unique taste.
For instance I like HEPAR because its taste is strong and it is magnesium rich πŸ’¦
To give your water a twist you can add lemon, cucumber or any / you like πŸ‹

Day 14 is the last day of my holiday challenge.
Yesterday evening I had some fish with aubergine. I know fish is not vegan but I decided to reintroduce fish and eggs into my diet occasionally because no carbs and no animal foods at the same time is too hard to maintain for me. But I will keep vegan days and meals as much as possible. Yesterday I was literally craving for fish.
During my 14 day challenge I managed to fast, to cut carbs, to eat vegan at all meals at the exception of twice where I had prawns and fish.
I am proud I managed the challenge while my family did not follow me although they eat mainly organic and gluten free.
I resisted food while fasting (I was actually cooking for them), I resisted cheese and meat, I resisted cakes and desserts. My sugar intake consisted in fruits, dark chocolate with ground almond and coconut oil when the urge for something sweet was too strong to fight.
I think that I got benefits from several things:
Fasting helped to reduce my appetite and eliminate the stress and toxins.
Vegan diet helped to reset my taste buds and enjoy veggies and fruits like never before. I have never been vegan for so long.
Maybe because it was summer I ate mostly food and felt full quicker than usual.
Light workout and yoga kept me toned, relaxed and balanced.
Let's see what happens in London when I will return to family routine and work.
Today we are heading to to catch the . I am making tomatoes, avocado, grapes and lemon with olive oil in my glass jar for the journey. This morning I am skipping breakfast as I am still digesting yesterday's dinner.

Detox challenge update
Day 13: we woke up at 4am to leave early and drive to where we are going to stay overnight with another friend of mine.
Lack of sleep does not match my challenge. I can hardy digest my breakfast (I should have gone for ) and my inner is disturbed. Sleeping in a car is not something I can do easily because the motorway stresses me out. So I am listening to and I day at the same time. I drink plenty of and hopefully I will manage to schedule a before tonight.
When we stopped for a break, I found a spot to perform a few simple stretches and avoid back pain. Sitting in a car for hours is not my favourite part of the holidays. Thankfully the landscape is

Detox challenge update
Day 12: today I have been quite active cooking, swimming and preparing our journey back to London hence I needed more energy. I increased the quantities a bit but managed to keep my diet and (don't know whether I mentioned it but apart from quinoa and oats I do not consume white carbs during my detox challenge on top of being vegan).
Right now, resting in the garden, I am enjoying the last outdoor moment before bedtime. I try to reflect on those 12 days spent with family & friends and better quality lifestyle.
The icing on the (vegan) cake is that I have slimmed down and overall I feel much better. My stomach is flatter, I feel toned, my clothes are more comfortable, my appetite is now tiny, my sleep is smooth... Can't wait to incorporate less food, less exercise and more yoga like activities and relaxation in my daily routine in London.

Day 9: unable to find a plant based protein powder in Nice I came across this soy protein meat replacement. It can be used directly from the package as a snack / breakfast or cooked in tomato sauce or casserole.

Update on my detox journey
Day 8: I noticed that my appetite has gone down. Even if I make a big plate I can hardly finish it. I must admit that I miss eggs and cheese a lot (meat & fish too but not as much). Maybe I will have some mozzarella at the end of this second week.
Veggies taste better than ever now I have been following a diet for 8 days.
The picture shows my and pesto I made for diner. The courgette comes from my mum's garden and is so tender and meaty. It is divine.
