Welcome friends to episode 2 of the Rum Blog!
Today I am highlighting a bit of a classic, R. L. Seale’s!
This rum, part of the Foursquare company banner, is originated from Barbados and is blended using imported rums and spices of the West Indies!
Blended in both pot and column stills before aging in ex-bourbon casks, the colouration and feel to the rum is slightly darker than you’d find from an aged rum.
On the palate, you’ll find notes of roasted almonds, cinnamon and toffee
The recommended serve as from the distiller is a cocktail called a Corn & Oil:
R.l. Seales
Falernum liqueur
Angostura bitters
Dark/blackstrap rum
However! My choice, is simply just a handful of ice and wedge of lime!
Did you know?
It’s alleged the bottle shape and design is inspired from the older leather liquor pouches that used to be used by sailors and merchants

For me, this is a pleasure of a rum to enjoy “a true classic, expert blending makes this an absolute treat, but! She bites! You really feel every % of that 46%!”

Happy Friday! And welcome to the first edition of the Rum Blog!
Of course, we have to start with our OG premium spiced rum, a blend of Dominican and Jamaican rums, brought together and then infused with the complex flavours of black cardamom, sour cherry, coconut, lime, sweet red berry peppers and vanilla.
The fact that I loved about this rum, and the first thing I came to admire about my bosses and the care they put into this rum, is just how many blends and attempts it took for them to get it to how it is today, Joe and Lisa persevered until they had a product that they would call perfect. And that in itself is a wonderful lesson to persevere and never settle until you have the best.
The rum itself is a 43% spiced rum, which makes it to the higher end of spiced rums in terms of strength, but that doesn’t change the quality, if anything the strength pairs so well with the bold flavours included in the rum
The recommended serve for us at the Krab and the first cocktail to feature our rum was:

🦀Angostura bitters
🦀Ginger ale
But my personal way to drink it? Ginger BEER and a big squeeze of lime 🤌🏼

I felt just as scandalous making this… but completely unapologetic of the outcome, a bitter, rich, refreshing drink that could also absolutely be “stunnin” with Prosecco 😂

Oleo saccharum using up-cycled orange, lemon and ginger peels
Garnished with the same peels, candied and dried!
Regardless of whether this gets through, I am very happy with how it came out, and getting to learn about the unique ways to reuse ingredients has been very educational to my craft!
