Meet Bao Bao, the baby panda. Eeeep he’s so so cute, small and mighty Bao Bao embodies all the forces of good in a little dumpling shaped body. In Chinese Bao means “treasure” a light that radiates sweetness out into the universe.
Bao Bao is made with our luscious white chocolate and dark chocolate made with cacao from our favourite farms and growing regions. Bao sits on a magnificent nest made by smooshing roasted hazelnuts and dark chocolate together then hand cranking it through an old schoolpasta press. House made Gianduja, the good stuff.
Very limited edition, each adorable part of Bao Bao is hand sculpted giving each Panda their own little personality. Inside Bao Bao’s belly is a delightful Yuzu & rice cracker donut. Because baby pandas eat donuts right? ;)

Plum trees blossom right about now when there’s still a chill in the air. Many poems have been written about their beauty. The plums signify warmth and good luck and renewal. Pickled Umeboshi plums are fruity, sour and salty... intense mellowed beautifully when melted into a perfectly cooked creamy caramel.

Dragon Dumplings!!
To celebrate the Year of the Dragon- raspberry Chocolate dumplings!!
This year we decided to supersize them into hand size dumplings. Inside a chocolate dumpling the most luscious Raspberry truffle filling Wrapped up to be festive.
Dumplings are a very Chinese way to celebrate love and togetherness. Gathering with family and friends laughing, telling stories, lovingly critiquing each other’s dumpling wrapping skills then sitting down for a delicious meal of dumplings together. The whole day is loud and rambunctious, a very joyful affair. My family is especially loud.
So how do you make chocolate dumplings? Lol not easily. Unlike dumpling wrappers that are soft and pliable, chocolate is anything but. We make paper thin chocolate wrappers, pipe on fluffy raspberry ganache and fold(!) into a dumpling before the chocolate sets hard.
The whole process is pushing the science a bit but it’s totally worth it. The result is a beautifully wonky looking dumpling... crispy chocolate skin snapping through to soft tangy filling.

The middle is a malted milkshake made into a super smooth chocolate (a Malteesers-Horlicks love child) whipped up into a buttery cloud dotted with crunchy stars. The fluffy chocolate is piped into a dark chocolate heart and topped with a constellation of crunchy Pecan Pralines.

Make your own chocolate bars
Learn how a single cacao bean is turned into chocolate. Chocolate has over 400 flavour molecules making it one of the most complex foods in the world. We will be opening up our secret stash of wild and wonderful ingredients to our group of explorers. With your newly tuned tastebuds design your own chocolate bar. You’ll then have your Lucille ball moment and make your own chocolate bars.
Last year’s bars ranged from elegant, to really wacky, to super organized to really chaotic. Some very interesting flavour combinations. All beautiful in their own way...just like people and couples and love. :)

Maria and Michael owners of Kinsip will join us as co-navigators for the Cocktail and Chocolate evenings. Learn how the magic of making spirits happens at their very cool micro distillery in PEC. They have created 3 cocktails made with their beautiful spirits for this lovely dovey evening. Choose and make the cocktail that best pairs with your freshly made bar.

All 3 shops will be getting a fresh supply this week and we will try our best to keep them stocked until Xmas eve. Our truffles are made every day by hand with fresh cream without preservatives so they should be eaten within a week or so, Shouldn’t be a problem right? My precious :)

Milky Milk Chocolate
Can we talk about Milk chocolate? Dark chocolate has been having its moment but let's not forget about Milk chocolate. When you intertwine cacao beans, sugar and milk and just the right proportion the results are mind-blowing. A whole other spectrum of flavour notes open... please step through the creamy portal to the land of nuts, florals, and caramel- maillard party time.
All our milks are dark-milks meaning they sit at 35% cacao content, It's the magic spot where the cacao still shines through a creamy lens. Most milk chocolate sits at 10.

It's a IYKYK chocolate, quietly addictive. It's our house milk we use to make our confections because it tastes good with so many different ingredients.We spent a couple years tweaking this recipe with the mission to make the perfect Milk Chocolate, a milk we would want to eat everyday. It's a perfect milky milk.. notes of fresh milk, caramel, butter, brown sugar. The milk is from Quebec, sugar is organic cane, the cacao 's beautiful beans from Ecuador.

A vibrant Yuzu jam is suspended above a luscious chocolate ganache spiked with Suntory Toki Whisky. Toki is a fresh Japanese whisky with notes of citrus, and peppery spices infused into a Semuliki dark chocolate ganache.
Raspberry & Kinsip Woodland Whisper Vodka

Mbingu, Tanzania dark Chocolate pod on a hazelnut nest. The final egg of the trio of eggs being hatched into the world.
We've been dreaming and wanting to release this chocolate for 3 years .. but then the pandemic, life. happened.. super happy to finally share this beautiful cacao with everyone as a Pod later in the year as a chocolate bar. It's going to be fun to paint the packaging for this origin. Hello elephants.
Mbingu is a 70% dark chocolate made with cacao grown in the Kilombero Valley, in the heart of Tanzania. Trees grown in the valley are certified organic, farmers in Kilombero have been practicing organic farming for generations. "Mbingu", Swahili for Heaven is the small town where the beans are fermented and dried. The location borders on the Udzungwa Mountain National Park famous for its bird, primate, and Savannah elephant species.
The pod is life size like a cacao pod in the wild, Piedmont hazelnut & chocolate are smooshed together then hand cranked through an old school Venetian pasta press and sculpted into a nest for the pod to sit on.

Meet Niblet the adorable baby beaver. A charmer, cute as cute can be, bringer of smiles for a moment of sweetness.
Niblet is composed of dark, caramel and white chocolate made using cacao from our favourite farms and growing regions. Niblet's fur is made by smooshing roasted Piemonte hazelnuts and chocolate until smooth then molding by hand through an old school pasta press.
Fun fact: Beavers are vegetarians, they love to chew wood for their abodes and eat leaves and roots. Inside Niblet's belly... a bouquet of fruit chocolate leaves.
We've been working on Niblet for months, sculpting. casting 100s of molds, figuring out beaver fur is an interesting conundrum. Can't wait to see little fuzzbot out in the wild. Video is of a beaver friend we made up in Sudbury.

A collaboration with our star lit pals Steph and Bruce the creative minds behind Roselle. Collabs with friends are the best... it just goes deeper and we both go all in for you and each other.
Black Forest Cake is one of my Mom's favourite cakes, we ate it as kids a lot, and…she just joined Instagram last week so say Hi to my Mom.
Roselle's cloud supreme chocolate pavlova with sour Cherry compote and custard! Doused in chocolate shavings and truffle cubes we made with cacao beans. Hi Freddy.

After a crazy ride building our dream chocolate factory from a bunker with no roof or walls we finally opened our doors in 2020, 3 months later our little chocolate world and the pandemic collided. Remember the chocolate dumplings for CNY? We promised to make the star destroyer dumplings for May the 4th. Yes we are nerds. Nerds making delicious things for other nerds.

Meet Quill the baby hedgehog. This cute hoglet comes out at dusk to play under the stars bringing a smile to you or someone you love...a moment of sweetness.
Quill is composed of chocolate made using cacao from our favourite farms and growing regions. Their spiky fur is a delightfully delicious mix of rare roasted Porcelana cacao nibs from Venezuela, organic coconuts and crunchy bits and bites.
Hedgehogs love to eat bugs!! Inside Quill’s belly a pair of raspberry hazelnut chocolate ladybug truffles with pop rocks for a crunchy bug-like effect. Quill sits on a Gianduja nest made by smooshing roasted Piemonte hazelnuts and chocolate until smooth and molding it by hand through an old school pasta press. During the day Quill sleeps in a beautiful reusable 1L Weck jar. (Yay to zero waste bpa-free packaging)
