It’s a super busy time of year so thought I’d share my meal
Plan for this week!! It might evoke some inspiration for you this week ❤️

Happy fun food Friday 🍝

Right check this out - homemade brocoli pesto pasta sauce. Yup yup you read right, I’ve somehow managed to sneak brocoli into this pasta sauce and I assure you, Mitch and the kids HAD NO IDEA !!!!!

This is so quick and easy, I made it whilst the pasta boiled and chicken cooked. Take a look 👇 (I sped the video up slightly so I didn’t bore you. But total time was 5 mins, which included a pause to clean the cheese out of my eyes 🙈)

Blend until smooth:
2 cups of basil leaves
2/3 cup of pine nuts
2/3 cup grated Parmesan cheese
2/3 cup of olive oil
Ground garlic, salt and pepper as you fancy

Then add a small dash of water and florets of a small broccoli. I had steamed mine for 1 min prior.

BOOM. C’est fini ❤️

On Mondays, we bake 🍞

This afternoon, the kiddies and I enjoyed baking a delicious, low sugar version of banana bread. So cute getting them involved in baking, they have so much fun. I love having a slice of this, toasted with a big dollop of butter that melts through. With a tea, of course.

The recipe is so simple. It is literally mix dry ingredient, mix wet ingredients, put together, bake. Done!

To lower the sugar content, replace honey with rice malt syrup (the one I use is pictured and bought off amazon).

〰️2 eggs
〰️1/2 cup melted coconut oil or olive oil
〰️1/3 cup honey or rice malt syrup
〰️1/4 cup milk or Greek yogurt
〰️1 teaspoon vanilla extract
〰️1 cup mashed ripe bananas about 2-3 medium bananas
〰️1 3/4 cups flour
〰️½ teaspoon ground cinnamon optional
〰️1 teaspoon baking soda
〰️½ teaspoon salt

1️⃣ Pre-heat oven to 170 Celsius. Grease a loaf pan and set aside.
2️⃣In a medium bowl, whisk the flour, cinnamon, baking soda and salt. Set aside.
3️⃣In a large bowl, beat eggs, oil, honey, milk and vanilla for 2 minutes. Stir in the bananas, flour mixture and chocolate chips (or any other add ins of choice.
4️⃣Pour batter into greased pan, sprinkle with some more cinnamon or banana slices (optional) Bake for 45-55 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes, slice and enjoy!
▶️ store in fridge for up to 5 days / freezer up to 1 month
