Don't cook maini with sijui tomatoes and onions etc, because the liver will just overcook before the other ingredients are cooked and that will make it taste like sponge.
Simply fry the liver in a pan, with salt and a little oil. This piece took about 7 minutes to cook; 4 minutes on one side and 3 minutes on the other side. So delicious.
