Tonight’s dinner was grown completely on the homestead. Seasoned potatoes fries and everything on a salad with out the lettuce — green peppers, tomatoes, and cukes. An absolutely delicious dinner and feeling of accomplishment.
Todays harvest on the homestead. 17 large tomatoes, 12 sweet 100s, my first two cukes of the season, several cayenne peppers to finish ripening in the window sill, and five farm fresh eggs supplied by my girls.

Taco Tuesday on the homestead. As usual, a delicious taco salad with nacho chips. Yummy!
A little late posting this. Sunday dinner was beans (canned by me and in my pantry), fried potatoes, kale (from my garden last year and in the freezer), and cornbread. It was a delicious dinner :)
Today’s is a dessert. I was really wanting something sweet so I decided to fix me a cobbler. Using my home canned dried cherries I pulled from the freezer a few weeks ago I followed my mawmaws tried and true recipe. It turned out awesome!
For the last three weeks I have taken to writing down a meal plan. I have had a few days here and there that for whatever reason I changed my originally planned meal, but for the most part I have stuck to it. I am really liking@having it all@planned out because for me the hardest@part of my day is@deciding what to have. Plus there is the added extra advantage that it really helps in setting my monthly budget.
Somebody is upset because it is dark and he thinks it is time to go to bed.
No picture of the dinner tonight. But Instagram requires a photo so I used one of my boy :). Tonight’s dinner was a pantry pull of baked potato with butter and a salad with tomatoes, green pepper (from this years garden), cheddar cheese and ranch dressing. It was meatless Monday on the homestead tonight.
Tonights dinner for was homestead chili. The chili was a complete pantry pull. The entire meal would have been all a pantry pull but I am trying to use up some store bought crackers. In the chili I have ground beef (from a local family farm), kidney beans (I canned in September), dehydrated onions and green peppers (from last year's garden), a tomato (I needed to use up), tomato juice (that I canned last year), chili powder, garlic powder, onion scapes (I dehydrated and powdered from this year's garden), salt, and pepper.

This mornings breakfast. Fried potatoes (the last from this year my first time growing them), a scrambled egg (from my girls the I waterglassed in April), bacon (from a local family farm), cooked apples, and toast (still to afraid to make my own). It was really good and got the day off to a good start :) .
Taco (salad) Tuesday on the homestead. Used my own taco seasoning, home canned mixed beans to make the refried beans, and my first ever batch of home canned green tomato salsa. Yum-my!!
Even when he is tuckered out little boy stays close to me when I am working. He is my angel :)
Good morning from the homestead on this chilly 36 degree start to the day. Have a lot on the to-do list this weekend, and hope to tick off several of the items. Wishing you all a blessed Friday :)

We are forecasted for our first freeze tonight. I have covered a few things in the hopes of giving them a little longer to finish out producing. I have also moved what little herbs I had come up to the covered deck and have covered them as well.

So I decided to try starting up my YouTube channel...again. I tried a couple of times before and really made it more stressful than it needed to be. I am wanting to enjoy it and have fun with it :)

Poor baby had a rough week. He is ready for the weekend :)
My first year of participating in the is in the record books. There were days I didn’t think I would get anything done but I soldiered through. Come this winter I will be thankful that I held in there. Poor little boy is exhausted from supervising the entire 31 days. He has earned a much deserved rest. As for me, I have decided to keep on preserving as much as I can when I can. We have some rough times coming and every bit will truly count.
Day 31 — dehydrating bread. I am woefully low on my homemade breadcrumbs and have had a bag of bits and pieces sitting in the fridge for a while now. So I got them out and defrosted them and into the dehydrator they went. I will grind them up really fine in my blender and store on my dry pantry shelf. I have been thinking of making some Italian ones as well. I love these on pork chops.
Day 30 — chocolate chip cookies. Adding to the pantry is important to me, but so is having a few snack foods included. I mixed up a 1/2 batch of my favorite chocolate cookie recipe, rolled it into individual portions and flash froze it them go into a bag in the freezer. Now I can have cookies anytime without all the mess and prep work. Win — win :).
Day 8 — stuffed peppers. Ever since my aunt Monica gave me her recipe for stuffed peppers I always try to make sure to have some in the freezer. Me and Chiggy had eaten the last of the previous batch a couple of weeks ago, and with my peppers starting to grow now seemed the best time to put up another batch. I will flash freeze these four and then I put two back for dinner tomorrow.
Day 7 — tomato juice. I had to open a jar of tomato juice for a recipe and didn’t use it all. I didn’t know if I would need anymore again soon, so a froze most of it and left a little in the fridge. Once frozen I will pop these cubes out and put them in a baggie. Then when I need them I will thaw the amount I need.
Day 6 -- onions. Spring and summer onions are not my thing. I have much better results with wintering my onions over and harvesting them in the early spring. This year I decided to give it another attempt. Although I did get some there are not near enough. I use onions in everything. I am still deciding if I am going to dehydrate this year's crop or freeze them. Either way I am very grateful for what I was able to harvest.
Day 5 -- more okra. I wasn't really feeling like doing much but wanted to stay on track. I had harvested a few more okra and figured they would be quick and easy to put up. I sliced them, dredged them in egg and milk, and coated them with corn meal. Then onto a parchment lined sheet and into the freezer overnight to flash freeze. I will bag them up into servings in the morning and add them to my list of pantry staples :)
Day 4 -- tomato sauce. This one was a first for me as well. I wanted just plain tomato sauce so that I could use it for spaghetti, pizza, or any other sauce I may be needing at the moment. The big learn on this one was that I got too impatient and didn't let it cook down enough. It turned out great otherwise will plan on cooking it a little more when I need it. Got 8 pints for the pantry with a little tomato juice left over.
