Happy Ice Cream Day! Make this easy blender ice cream. Enjoy with natural sprinkles and a healthy coconut waffle cone.
Here’s the recipe:
1 quart Organic Heavy Cream
1/2 cup Non-GMO Allulose
2 tsp Vanilla
2 pastured egg yolks (or 2 tbsp olive oil)
Pinch salt
Blend and freeze for one hour in a covered tub. Stir after one hour and freeze one additional hour. The egg yolk (or olive oil) keep the ice cream soft and scoopable.

VEGAN TACO SALAD! Lectin free never tasted so good! This salad bounds with clean organic produce including living butter lettuce, peeled and seeded hothouse tomatoes, fermented red cabbage, and green onions. The “meat” isn’t what you think. It’s crushed walnuts seasoned with my own mild taco spices like cumin and ancho chili powder browned in EVOO, then slow simmered in water to soften. As good as that all sounds, this taco salad is all about the sauce! For an explosion of flavor, I made avocado crema with plant-based sour cream, mashed avocado, garlic and lime juice. I also used tangy, smoky chipotle Tabasco. 🌶️ 🔥
On the lectin free lifestyle, grassfed and finished beef is fine in moderation. But sometimes meat feels too heavy on a hot summer night.

DO YOU FAST? I recently did a 7-day (water only) fast with amazing results. By the end, my arthritic thumbs were healed, I had a concave stomach, and no cellulite. I practice daily intermittent fasting with a 2-hour eating window between 5-7 pm. So I was well, prepared for a longer fast, which also includes lots of prayer.

Yesterday I skipped my eating window so I hadn’t eaten since Sunday night — so I fasted for about 36 hours. This morning, I broke my fast with two slices of my Lectin Free Gourmet pumpernickel sourdough set in the brad machine, with avocado and my backyard sunny eggs. I drizzled plenty of olive oil all over it. Simply delicious! Honestly I could have gone without eating until 5 pm, but this bread was calling my name.

BLUEBERRY CRISP! I was so craving a berry crisp last night. Rummaging through the freezer, I found some wild blueberries. 🫐 Woohoo! Here is the ridiculously easy recipe:
Blueberry Filling:
1/4 cup wild blueberries
1 tablespoon Allulose
1/8 teaspoon lemon zest
Tiniest pinch salt ( to make the blueberries sweat and bring out their juices)
Almond Crisp Topping:
1 tablespoons greased ghee
1 tablespoons cassava flour
1 tablespoon allulose
1 tablespoon blanch sliced almonds
1/8 teaspoon Vanilla powder
1/8 teaspoon Cinnamon
Tiny pinch salt
Directions: nice filling ingredients together in a 4 oz ramekin. Then, melt ghee in a medium bowl. Add remaining crisp ingredients together. Scrape onto top of filling. Bake at 350 F for about 20 minutes or until golden brown and bubbly.

Don’t underestimate the power of mushrooms. This one can sit, stay and fetch your morning paper.
NATIONAL PANCAKE DAY! Skip the gluten-laden free stack at your local pancake house and make my fluffy Lectin Free Gourmet buttermilk pancakes instead:
1 C a2 Milk
1 T Distilled White Vinegar
1 T Olive Oil
Pastured or Omega-3 Egg
1 Cup LFG Flour Blend*
1 T Tapioca Flour
1/2 t Baking Soda
1/2 t Salt
1/2 t Xanthan Gum
1 T Flax Meal
1 T Grassfed Collagen
French Butter for Griddlle
*2:1:1 cassava, coconut, and blanched almond flours
Whisk milk and vinegar together to make buttermilk. Then whisk in olive oil and egg. Finally stir in all dry ingredients.
Heat a griddle to 350 degrees. Lightly butter, then pour 1/4 cup batter for each pancake onto griddle. Flip when bubbly.
I like to add blueberries or 72% cacao chocolate chips for special occasions. And, really, I can find any old excuse for that. Like, I’m picking up my son at the airport today —BOOM — special occasion! I deserve chocolate chip pancakes.
