3 tsp. pizza sauce (sugar free!)
3 tomato slices
Olive oil
Italian herbs (e.g. oregano and basil)

1ยฝ oz. Monterey jack
1ยฝ oz. cheddar cheese
12 small slices of chorizo or pepperoni

1. Prepare the Portobello mushrooms by washing them, removing both the gills and the stems.
2. Sprinkle with olive oil and pizza seasoning, and then top with all the other ingredients, except the pepperoni slices.
3. Cook at 450ยฐF for 6 minutes. Add the pepperoni slices and broil until crispy.

Ingredients (for 1 burger):
2 Portobello mushroom caps
ยฝ tbsp. organic extra virgin coconut oil
1 garlic clove
1 tbsp. oregano
6 oz. organic grass fed beef or bison (ground)
1 tbsp. Dijon mustard
1 tsp. salt
1 tsp. freshly ground black pepper
ยผ cup cheddar cheese
Extra salt and pepper (to taste)
OPTIONAL: Pickles, lettuce, tomatoes, sugar-free ketchup and more mustard...

Directions:
1. Clean the Portobello mushrooms. Remove the stems and scrape the gills.
2. In a bowl, combine coconut oil with garlic, oregano, salt and pepper. Marinade the Portobello mushrooms in the mixture while you complete the other steps.
3. In a separate bowl, combine the ground meat, mustard, salt, pepper and cheddar cheese. Shape the patties with your hands.
4. Place the mushroom caps on a grill for 7-10 minutes. Remove and cook the burgers for 6 minutes on each side.
5. Remove both from the heat and assemble the burger. Add preferred toppings and serve.

8 ounces cheddar cheese grated and divided
12 large eggs
4 ounces cream cheese softened
12 tablespoons butter melted (I used unsalted)
salt and pepper to taste optional
Instructions
Dump all but about a half cup of the cheese into a 9.5-inch pie pan.
Add eggs and cream cheese to a food processor or blender.
Process eggs and cream while slowly pouring in melted butter.
Pour egg mixture over cheese in pie pan.
Sprinkle reserved grated cheese over top.
Bake at 325ยฐF for about 45 minutes or until outside is set and middle is only a little jiggly.
Remove from oven and cool on rack for a few minutes before slicing.
Store leftovers in refrigerator for up to a week or freezer for longer storage.

3 cups mozzarella cheese ๐ง shredded
2 oz cream cheese
1 3/4 cups almond flour ๐ฅ
2 large eggs ๐ฅ
1 tbsp baking powder ๐
3 tbsp everything seasoning optional
Instructions ๐ฉ๐ซ๐จ๐ซ
Preheat oven to 350F and line a baking sheet with parchment paper.
Add the mozzarella cheese and cream cheese to a large microwaveable bowl. Microwave for 2 minutes or until the cheese has melted.
Remove from the microwave and stir with a four until fully combined. Immediately add the almond flour, egg, and baking powder. Stir to combine until the flour and eggs are incorporated into the mozzarella. If the dough is sticky, knead with hand until long longer sticky.
Divide dough into 8 equal portions. Shape each portion into a doughnut shape. Place on prepared baking sheet. Garnish with the desired topping or leave plain.
Bake 15 minutes. If desired, broil for 1 minute to brown the top of the bagels. -
Recipe Notes ๐
If the dough is too sticky, reheat for 30 seconds in the microwave and re-mix and it should hold up. If it's still sticky after reheating, add 1/4 cup more flour and mix in.
