It’s incredibly easy to whip up a large batch of Thai Green Curry that can be easily frozen. Today, I’m using this to cook two big pots of curry! Making it from scratch is simple, and the best part is it saves money😁👌🏼
Beef Bulgogi and Beef Galbi tonight! A simple marinade with a few ingredients that’s incredibly delicious. Here’s a tip: soak beef short ribs in water to remove the blood and enhance the flavor. Also for a smoother marinade I would strain it through a sieve.
You can also use Nashi pear in place of Kiwi.

I added an extra 50g of onion, doubled the sugar and added 50g soy sauce.
You can easily grate cheese with a Thermomix®️. Small cubes (around 2-3cm) I put 200g of cheddar cheese and turn it on speed 7 for 5 secs. Better than those ready grated stuff that contains whatever anti caking agents inside. Once done it goes into the freezer for when I need to use it next!
Today, I squeezed in a quick baking session before dinner prep with two easy Cookidoo®️ recipes. I made Chocolate Sweet Potato Slice which is a little similar taste to a brownie. I love these kind of cake recipes with added fruit and veggies. I tweaked the recipe by using plain flour instead of coconut flour and adding 80g of brown sugar for just some sweetness as the recipe didn’t contain sugar at all. I also made Edna Lemon Curd Tea Cakes, which are delicious warmed with ice cream. I'm actually enjoying one right now as I post this for my supper🤭

Ube (Filipino Purple Yam) Pandesal for breakfast, but my husband couldn't resist and sneaked one in last night for supper😆. I've always loved anything Ube, and a friend gifted me a jar of Ube Jam from the Philippines which was perfect to make these. These deliciously soft and sweet buns are flavored with Ube extract and filled with Ube jam and a cube of cheese. The combination of cheese and Ube is simply amazing!💜

Bread dough ingredients
600g Bakers Flour
360g water
2 tsp instant yeast
60g sugar
30g butter
100g oil
1 egg
2 Tbsp Ube flavouring ( McCormick brand)
Ube Jam
150g Cheddar Cheese cut into 14 cubes
Bread crumbs
Made this shredded chicken this morning for kids lunches. Add whatever seasoning to your chicken you like, I’ve added taco seasoning with this. I used this recipe from Cookidoo®️ and then let it do its thing while I prep the rest of the lunch box. Once done just 5 secs and reverse the blade speed 5 and voila you get shredded chicken! Love how quick, easy and simple this is with minimal tools and mess. Saves me so much time from hand shredding it🙌🏼
I made Taiwanese Braised Pork on Rice for dinner tonight. For the first part of the cook, I steamed eggs on top of the pork. Had it on cooking while I took my daughter to gymnastics. When I got home the peeled eggs were added back in with the pork for another 10 minutes, with the veggies steaming on top. Learnt something new today, that using the butterfly attachment prevents the blades from chopping up the eggs😁
Quick baking session this morning for the kids’ lunch boxes. Started at 7:15 am and got everything done just in time for them to leave at 8:30 am😅. Didn’t have time for a second proof for the sausage bread, but it still turned out great!
I usually skip the cakes section at the supermarket, but I recently checked and was shocked at the price for 8 chocolate chip muffins, not to mention the preservatives that’s in them. It took me just 5 minutes to mix and 20 minutes to bake 12 preservative-free muffins, and they were much cheaper to make!

⭐️Vietnamese Lemongrass Chicken and Kung Pao Cauliflower ⭐️
I’ve made Vietnamese Lemongrass Chicken countless times! It's simply easy and delicious. Since my children aren't fans of minced lemongrass, I usually chop it into larger pieces so they can easily remove them. 😅
While searching for a veggie dish, I came across a Kung Pao cauliflower recipe that was fantastic! I loved how roasting the cauliflower in the oven added depth to the dish. The sauce, prepared in the Thermomix®, was bursting with flavor from the chili and ginger.

⭐️Super Soft Cinnamon Scrolls⭐️
I made a batch of super soft cinnamon scrolls that I quickly piped with cream cheese icing. They may not be the prettiest, but they tasted amazing! These were made for the kids' tea time and breakfast the next morning. The dough is a milk bread recipe I experimented with to get the perfect consistency, and it stays soft even the next day. I like to warm them up in the microwave for about 20 seconds. I love using my varoma basket to prove the dough—it's much more efficient than using the microwave with a glass of warm water! ☺️

⭐️Sticky Pork Belly⭐️
Dinner last night was incredibly tasty sticky pork belly. It was my second time making it because it's just so delicious. I used both pork belly and pork leg and the meat had a melt-in-your-mouth texture. While the meat was cooking the rice was steaming on top in my Varoma bundt tin. You can also steam bao buns on top instead of rice and serve that with some cucumbers and coriander😁
