Good afternoon to all!! The sun has stayed with us, how lucky are we?? Good old May, and two long weekends, the banks are good for one thing at least ;) How much more alive is everything now, including people! As always our chocolates are made with real ingredients, no preservatives and no oils or concentrates. I believe that humans can't make better "nature identical" flavours than nature can, you can't caramelise Apple oil and there is little enjoyment in eating something you know is full of nasties. So when we make a raspberry ganache, we make it with fresh raspberries, a splash of cream and chocolate, as it should be made. So expect lots of real flavour from this months selection!

Wow! Its March! Did anyone see February? I think I blinked and missed it, where is time going? I feel that a little background on the cloudberry is necessary here, as they really are unique!
The cloudberries (moltebær) used in this recipe grow in the marshes of Norway, where they need very particular growing conditions. Because of this they aren't farmed or cultivated, just picked wild from often secret patches when they ripen. They have a tart almost floral flavour that is really quite unique, they grow singly on stalks, looking like a raspberry with oversized "segments" and start off red, ripening to an amber/orange. The Norwegians call them forest gold, id be inclined to agree with them, I found about 5 on a mountain in Norway and I felt like I had won the lottery!

Chocolate Cocktails Who doesn’t love chocolate? In the UK, people consume on average 11kg of chocolate per person per year and I wouldn’t be surprised if a large chunk of it was during Christmas time. I met with Jeff ...

Its a wonderful thing in the christmas madness to get to create something custom, and this is one i really loved:
Its a custom design based on a mid century classic style, and features 4 separate pieces of wood in drum shapes. It measures 75 cm x 35 cm. If you would like something similar, or something custom just for you- get in touch!
