Our 8 month old baby girl Colette enjoyed fresh herbs today! Hereโs what I paired (and you can try the same herbs in your kitchen!
Whole grain pasta + Fresh ๐ฟ Basil
Spring Peas + Fresh Mint
Broccoli ๐ฅฆ + Fresh Thyme
All veggies and pasta were cooked or steamed until soft. I processed mini food processor and added herbs at the endโpulsed a few times. Add additional water to keep moist.

High Protein Muffins (WFBP)-Whole Foods Plant Based
I cannot stand being hungry immediately after I eat breakfast. Usually that means 1 of 2 things:
1) I didn't get enough Calories
2) I didn't get enough Protein
I eat 2 of these High Protein Muffins for breakfast.
They are rich in Protein (6 grams), Fiber, Potassium, and provide Iron, and Calcium. The Muffins are fluffy, but still dense, slightly crumbly, moist, tart from the berries, and Whole Foods Plant Based! If you're trying to lose weight, need a pre-workout "snack", or just a quick grab and go breakfast, this recipe will not disappoint.
A big shout out to Cara Clark for the original muffin recipe that I modified.
My husband and I have decided it's our favorite muffin! Cara Clark Nutrition, I love everything you share!
How to Make:
INGREDIENTS:
3 tsp Chia Seeds
1/2 Cup Water
1/4 Cup Coconut Oil, use Unrefined if you can (melted and slightly cooled)
3/4 Cup Almond Butter (no added sugar, no added salt)
1 tsp Vanilla Extract
1/2 Cup 100% Maple Syrup
3/4 Cup Whole Wheat Flour
3/4 Cup All-Purpose Flour, Unbleached
1 tsp Baking Soda
1/2 tsp Baking Powder
Pinch of Sea Salt
1 Cup Mixed Frozen Berries (defrosted for a few minutes)
DIRECTIONS:
1) Preheat over to 350 and line muffin pan or spray with cooking spray.
2) Combine dry ingredients in a bowl (Flours, Baking Soda, Baking Powder, Salt) and whisk together until combined. Set aside.
3) Combine Chia Seeds and Water and allow it to sit for a few minutes.
4) Combine your other wet ingredients: In a bowl, whisk together melted Coconut Oil, Almond Butter, Maple Syrup, and Vanilla Extract.
5) Add your Chia Seed Mixture to the wet ingredients. Mix well.
6) Pour your dry ingredients into the wet ingredients. Stir until combined (it may be a little lumpy).
7) Fold in Berries using a spatula. Spoon in batter into muffin tins until about 3/4 full. Makes about 16 muffins. Bake for 18 to 20 minutes or until lightly browned.
Serving Size: 1 Muffin
Nutrition: Cal 160, Fat 10g, Sat Fat 4g, Sod 32mg, Carb 15g, Fib 2g, Sug 7g, Added Sugars 6g, Pro 3g
