We use this SOO much in our house! To make tacos, 7 layer dip... liven up some chicken about to be grilled... It amazes me how much junk can be hidden in the store bought brand, and how easy this is to make... we keep ours in a mason jar!
2 Tbsp. chili powder
1 Tbsp. ground cumin
2 tsp. ground black pepper
2 tsp. sea salt (or Himalayan salt)
1 tsp. onion powder
½ tsp. garlic powder
½ tsp. dried oregano
Super Bowl Sunday is right around the corner! We are in the middle of a clean-eating challenge and our challengers wanted some clean eating appetizers to be able to snack on, so here is a cleaned up version of one of our favorites!
RECIPE:
7-Layer Dip
Layer the following on a tray or large plate in this order:
Layer 1: Can of re-friend beans (check the ingredients to make sure the beans are the only ingredient)
Layer 2: 1 cup of Greek Yogurt Mixed with about 2 TB of Taco Seasoning. (We recommend homemade taco seasoning so you know exactly what is going in there- we will post a recipe for that next!)
Layer 3: 3 smashed avocados
Layer 4: 4-5 diced tomatoes
Layer 5: Shredded Romaine Lettuce
Layer 6: Shredded Cheddar Cheese
Layer 7: Sliced Black Olives
Use cucumbers, peppers, carrots, whole wheat crackers, whole wheat pita, etc, to dip

Wanted to invite anyone interested to our February 1, Clean Eating Challenge. How does 2-weeks of planned meals sound to you? Does losing up to 10lbs in that 2-weeks sound even better? Not possible you say? I dare you to commit to 10-days of eating clean, adding 30 minutes of exercise each day and drinking water!
All you have to do is message me or comment below that you want in, I'll add you to the group and you follow along. This is how my journey began after I had my third baby and was having trouble losing the baby weight. Now almost 3 years later I am in better shape then before I had kids!

Today's Lunch!!
(I can't take credit for making it though... my super talented mother in law made it :))
Mediterranean Tuna Salad
10 oz Tuna (we used bumble bee albacore in water)
1/2 c kalamata olives
1/2 c feta cheese
2 small bell peppers (chopped)
1/2 red onion (chopped)
1 15 oz can chickpeas (rinsed and drained)
zest & juice of 1 lemon
1 TB dijon mustard
1 TB EVOO
1 pint grape tomatos (halved)
Put everything into a bowl except for the tomatoes and combine. Fold in tomatoes. Serve. Add salt to taste.
PUMPKIN MAPLE GRANOLA!!
YUMMM! Perfect for this time of year without all of the added sugar and crap from the store bought kinds!
Pumpkin Maple Granola
Dry Granola Base:
5-6 cups of a combo of oatmeal and any nuts you have. You can go much heavier on the oats and lighter on the nuts depending on what you are looking for in the granola.
{I used: 1 cup oats, 1/2 cup steal cut oats, 1 cup cashews, 1 cup sliced almonds, 1 cup walnuts, 1 cup pecans, 1/2 cup sunflower seeds}
Wet Flavoring:
1 cup pumpkin
1/2 tsp cinnamon
1/2 cup maple syrup
1 1/2 TB Pumpkin Pie Spice
2 TB coconut oil
1 tsp Himalayan salt
Mix dry granola base in one bowl, and the wet flavoring in another bowl. Pour wet mix over dry base. Mix well. Pour mixture over parchment paper lined baking sheet. Spread out as much as possible.
Bake at 300 degrees. After 20 minutes, stir. Bake for another 20. Bake for another 10-15 until it is finished. Be careful not to over bake. Granola will crisp up more once it is out of the oven and cools a bit.

Motivation Monday!
I finally found the perfect combination of ingredients to make an awesome chia seed pudding!
CHIA SEED PUDDING
makes 1 serving (easily doubled, tripled though)
I chose to do this as a 1 serving at a time so I could prep them in mason jars so they would be easy to grab and go for me!
3/4 cup unsweetened almond milk
1/2 TB honey or agave
8 tsp of chia seeds
1/4 tsp vanilla extract
Optional: berries, cut up banana to mix in
Combine almond milk, honey, chia seeds and extract in a mason jar (or bowl) Put cover on mason jar and shake up (or mix well in bowl).
Refrigerate for at least 4 hours or overnight, trying to give a shake or mix after 2 hours.
When ready to eat, throw some berries on top and maybe another drizzle of honey if you wish!
