**COMFORT FOOD ALERT**
Rainy days like today always make us reach for something comforting!
Our recipe of choice: low calorie, easy-peasy butternut soup 😋

Peel and cube 1 medium to large butternut and sauté in olive oil with 1 medium chopped onion for 5 minutes. Add 200ml water and 1 chicken stock cube, bring to the boil. Add enough milk to almost cover the butternut; simmer until the butternut is soft - about 15 minutes. Remove from heat; blend until smooth and add your favourite spices! Add a little cream for an extra splurge 😉
