Decadent Coconut-Macaccino Truffles By Renita Rietz.

Celebrate Valentines Day in style. Enjoy a delicious and healthy dessert and share the love with your friends and family.

These truffles are incredibly quick and easy to make. In less than 5 minutes you will have a delicious and nourishing raw treat to enjoy with a cup of tea. The rich dark cacao flavor, fragrant aroma of vanilla, bold taste of black maca and exotic coconut and cacao butter all combine to create a perfect, smooth mocha-chocolaty delight! This is like chocolate fudge, only better.

Dry Mix Ingredients:
6 tbsp. of Organic Traditions Macaccino
2 tbsp. of Organic Traditions Raw Coconut Oil (Alternatively you can do 1 tbsp. of Organic Traditions Raw Coconut Oil and 1 tbsp. of Organic Traditions Cacao Butter)
12 Organic Traditions Cashews OR 1 tbsp. of Organic Traditions Raw Almond Butter
5 tbsp. of Organic Traditions Sprouted Chia Powder

Optional: A dash of cinnamon

Rolling Ingredients:
2 tbsp. of Organic Traditions Yacon Syrup
3 tbsp. of Organic Traditions Shredded Coconut
2 tbsp. of Organic Traditions Cacao Powder

Preparation:
Melt the coconut and cacao butter at low temperatures. Place all of the dry mix ingredients together in a small food processor until all items are well mixed to create a perfect texture for rolling. If you don’t want to use a blender, replace the whole cashews with nut butter and simply mix all ingredients by hand in a mixing bowl. Form the mixture into balls. Yacon, coconut and cacao powder should be placed on separate plates. Use your finger or a paintbrush to apply the Yacon Syrup around the truffle ball. Then roll the ball in either the Cacao Powder or the Shredded Coconut on separate plates. This recipe will make roughly 6 balls (depending on the size). Place in the refrigerator for 30 minutes. You can also coat the balls with Rice Bran Powder, H**p or Cinnamon.

Keep warm and healthy with our nutritious and amazing Sprouted Quinoa Miso Soup by Renita Rietz.

This dish can be served as a soup or as a main. It is incredibly simple to make and so versatile. Miso is a wonderful superfood to incorporate into your daily diet. You will be amazed how quickly sprouted quinoa can be prepared. You can save the rest to use as a salad topping, a morning breakfast replacement for oatmeal or as a side dish prepared with fresh vegetables.

1 cup of water
1 cup of Organic Traditions Sprouted Quinoa
1 tablespoon of Miso paste (use more or less depending on how
strong you like your miso soup)
2 tsp. of Organic Traditions Raw Coconut Oil
1 tbsp. of Organic Traditions Sprouted Chia or Flax Powder
Garlic Powder (or 1 small clove of minced garlic for a stronger garlic taste)
Fresh Cilantro

Optional: Your choice of fresh vegetables (grated carrot, chopped bok choy, diced red pepper, etc.)

Preparation:
Boil one cup of water. Add one cup of Organic Traditions Sprouted Quinoa. Reduce heat and simmer for 10 minutes. There is no prewashing, rinsing or soaking required. Set the quinoa aside and prepare the miso soup. Use 8-12 oz. of warm water (not boiling) for one portion of miso soup. Vigorously whisk in the miso paste until well incorporated. More water will dilute the strong taste of the miso. I prefer a stronger Miso taste and so use 6-8 oz. of water.

Add coconut oil, sprouted chia or flax powder, garlic and cilantro. Add 2-4 tablespoons of cooked sprouted quinoa to the miso broth. Add any fresh or steamed vegetables of your choice. Save the rest of the sprouted quinoa for other dishes.
