Hey everyone, this is a tough one to write. We’re sad to inform you guys that we’ve decided to close down our current stall in Commonwealth. 🍔

The past 4 years have been a fun learning journey: designing our original cheeseburger and making sure all the components are done right, trying to create the best French fries in the world 🍟, constantly refining our techniques for really good fried chicken 🍗 , serving yummy fish burgers 🐟, cooking up a delicious version of nasi lemak for a budget of under $8, and so many more memories. Most important of all, we are introverts, and being hawkers have allowed us to meet many people and form connections which we greatly treasure. 🤝🏻

We saw all the DMs and WhatsApp messages that you guys sent us the past month. We’re sorry we didn’t manage to reply many of them due to our current day jobs but we’re glad that you guys didn’t forget about us haha. 😃🙏🏻

However, our passion for serving good food remains strong as ever. 💪🏻 Please stick around with us on our social media if you will, we MIGHT appear again somewhere in the near future. There are some options at the moment but nothing can be confirmed yet. Until then, thank you all so much and goodbye (for now). 🫡

(Closed for renovations) Hey guys, do note that Hammee’s is closed for hawker centre renovations until next year. ☝🏻 Looking back, it’s been a great run and this is an opportunity for us to take a break. 😃 We were inexperienced, and in hindsight, I felt there were many situations that we could have handled or managed better. Because we’re so passionate about this project, sometimes we let emotions get in the way. But as time goes by, we continue to improve and learn. Do excuse us for any shortcomings on your past visits. 🙌🏻 Hammee’s runs smoother now than before, and I hope we’ve improved your overall experience with us! 👍🏻

(Important announcement) Hey guys, many of you are already aware, our hawker centre will be closed 3 months for renovation works on 16 October. However we’ll be closing earlier if our supplies run out. ☝🏻 During this period we might experience a higher volume of orders than usual, so if you notice that our delivery platforms are switched off, do check back later or visit us at our stall. 😃👌🏻

(Tater tots are back!) Hey guys, we’re back from the lunar new year holidays. 🤗 Had a really good rest and we hope you did too! We wanna update you on a couple of changes at Hammee’s 👉🏻:

- Tater tots are back! 🥔 In our next round of sides rotation, tater tots will replace our onion rings. They’re supposed to replace the chicken nuggets but we decided to let the nuggets run for awhile more. Last minute decision.👌🏻 If you had our tater tots before, you’d know we cook them a special way, it’s so delicious. 😉 Get your hands on some before they run out. 😋🥔

- Onion rings are out but if you love their dipping sauce, you can still purchase them to go with our other sides. They pack a punch so if you love spicy food, this dip is a dream. 🌶

- The past 2 months while we’re doing our Nashville hot chicken burger, there are so many of you who enjoyed the “Extra spicy” version. 🔥🌶 I really don’t know how you guys can take it, it’s so spicy! 🥵 But ok now that the Nashville burger is gone, I wanna continue on that. So effective immediately, there will be an “Extra spicy” version of our classic fried chicken burger available. 🌶 This extra spicy version is a work in progress so please feel free to let us know if it needs to be more/less spicy. Your feedback is greatly appreciated. 😃🙏🏻

(Final week) This is it guys, the last week of our seasonal special Nashville hot chicken burger. 😊🍔🌶 Over the years, we study and continuously refine our frying process of chicken, we know them well. 🍗 And we apply many of the techniques into this Nashville fried chicken. Every bite is crispy, juicy, tender, and the delicious marinate goes deep within. This is a chicken sandwich, unlike any other. 🍔

(New burger side) This is a really late post about our new burger side. 😆🙏🏻

As we mentioned before, we do a seasonal rotation of our sides to keep our menu exciting, and also for easier inventory management. So for the first round of rotation about a month ago, we removed our mashed potatoes and tater tots, and added new onion rings. 🧅 We never posted about the onion rings before but it sells pretty good! 👍🏻 For the upcoming rotation, we’ll be removing either our chicken nuggets or chicken bites, and bringing back maybe our mashed potatoes..? 🥔 We haven’t decided yet but we’ll keep you updated next week. 👌🏻

Oh by the way, if you haven’t tried our new onion rings, do it. 😉 So addictive. At first we wanted to do beer battered onion rings 🍺 but I feel it doesn’t taste good when I make it. So we gave up, maybe I’ll try again next time. 😑 Meanwhile, try these onion rings without beer. Served with a house made sweet and spicy sauce. Really good. See you soon. 😊🍔

Hammee’s chicken burger guide 🍔: Hey guys, since the launch of our new Nashville hot chicken burger, we thought we’ll write a more detailed post to help you choose which chicken sandwich is the right one for you. 😃👌🏻 To keep it simple, we’ll put them in 4 categories:

(1) Classic original: This is our original Hammee’s fried chicken recipe, great for kids. This is one you get to experience the full flavour of our fried chicken with no spiciness. So delicious you can even eat it on its own. 🍗❤️

(2) 🔥 Classic spicy: This is like our classic original except it comes with a house made spicy sauce. This burger has been such a success for us, very popular among non-beef eaters. You should choose this if you love abit of spiciness in your food but not too much. 👌🏻

(3) 🔥🔥 Nashville spicy ⭐️: This is our new Nashville hot chicken burger. If you’re new to Hammee’s, this is the one we recommend now. Chicken thigh glazed with spiced chicken oil, served with pickles, cabbage and a new house made smoked habanero sauce. Do give this a try ok? We think you will really enjoy this. 🤠

(4) 🔥🔥🔥 Nashville extra spicy: This burger is for seasoned spicy veterans only. It’s our Nashville hot chicken burger with an even spicier sauce. It has a kick that will make you tear and sweat a little. If you have a higher spice tolerance, you’ll love this one. 🌶

Been working on this the past couple of weeks. 😃🙌🏻 We render our own chicken fat laced with cayenne pepper, garlic, onions etc. We then use this spiced chicken oil to glaze the crispy fried chicken thigh. 🍗 Served with sliced pickles, cabbage and a brand new house made sauce which will debut together with this burger. 🍔🌶

Here’s how they look before we slice them in half, toast them, and then finally the patties go in between. 🍔

The quality of beef patties in a cheeseburger is very important to us. 🍔 We don’t smash our beef patties on the grill, we prefer to retain the texture and bite of the minced beef. 🥩 Instead we use careful temperature control to achieve a crispy sear without smashing the beef patties, this way we can have both a crispy crust and still keep the bite texture of the delicious beef, the best of both worlds. 🙌🏻 When you bite into our cheeseburgers, you’ll know it’s Hammee’s.

Our delicious crispy chicken bites. 🍗 These beauties are 100% made in house. The idea came about when our customers requested us to create bite sized pieces of the chicken thigh in our fried chicken burger. 🐓🍔 But every single piece has gotta have that iconic crispy coating and edges, just like the original, otherwise it just wouldn’t be the same. We were hesitant at first because it’s challenging to produce big amounts of these without any machinery.

Eventually we found a way, but I’m really an idiot. 🤪 The first week when we had these chicken bites, I painstakingly coated (by hand) every single piece of the chicken with our own seasoned flour, 1 at a time! Took me almost an hour to create 50 portions. 🥵 One day, my mom saw it and said: “Why don’t you put the flour into a bag, then put the chicken pieces in, shake the bag and coat everything all at once? 🙄” And... so now we’re able to produce these much more efficiently. Thanks mom. 😅👍🏻 I’m not a trained chef, I had to learn many things the hard way haha... 😂

Anyways, it’s been really awesome with our new sides so far. We have plans to remove 1 of the current sides from our menu soon to make way for new ideas. It’s a difficult decision to make but I was thinking maybe removing these chicken bites or our chicken nuggets with special dip. Maybe our mashed potatoes or tater tots? 🥔 I’ll keep you guys updated on our new upcoming sides. See you soon! 👍🏻

Evolution of our fish burger through the years. 🐟🍔 Seeing the first one brought back so much memories for us. 🥰 I remember the few nights that we spent working on the home made tar tar sauce. We made a total of 6 variations of the sauce, some had chopped onions, some had dill herbs etc. We had to choose between using lime, lemon, apple cider vinegar or white vinegar for acidity. In the end we settled on lemon, we love the brightness it bring to the sauce. 🍋 A dash of Worcestershire sauce too to give the richness and umami. It’s a really nice tar tar sauce, simple but tasty, not overpowering, doesn’t get in the way of the fried fish. Just the way we like it, and we hope you do too. 👌🏻

(4) Hammee’s chicken nuggets with special dipping sauce. 😋 Hey everyone, just wanna tell you about another one of our new sides that you can order, our chicken nuggets. 🐓 Chicken breast meat brined and coated in a crispy tempura batter. We fry these in extreme high heat because we want the outside to be crispy and the inside breast meat to remain juicy and tender. 💦 The base is so delicious you can just eat it by itself, but we want to make it even better. 👍🏻

So we created a special dipping sauce to go with these nuggets and it’s really addictive. 👍🏻 It’s not a curry sauce even though it looks like it. Wish I could describe its taste but this is one of the situations when words fail me. I know that sounds like a marketing gimmick to trick you into ordering it but I swear it’s not! 😃🤞🏻 We sent out many versions of this dipping sauce to friends and family for feedback, and we tweaked it accordingly. This sauce was 3 weeks in the making and in the end I think we got something special here which you’re gonna love. ❤️ You can purchase this sauce separately for any other sides, but for our chicken nuggets it comes free. (New sides and dips launching on Saturday 13 August) Hey guys! The past few months we’ve been improving our operational speed very much, serving out burgers faster than ever with no compromise to quality.👍🏻 Now we feel confident enough to introduce a new and strong side menu, to complement our burgers. You can purchase these ala carte, or as a side to our burgers. 🍔🍟 I’ll tell you about 2 of them today:

(1) Hammee’s fried chicken bites 🐓🍗: For the longest time our customers have wished that they could have our fried chicken in bite sized pieces to snack on, but we were reluctant to do it for several reasons. ☝🏻 The chicken batter needs to have the uneven and pointy crispy edges that is iconic of our fried chicken, it’s more difficult to execute that technique on smaller chicken pieces. It has to be as good as our chicken burger, otherwise there’s no point, don’t you think? But somehow... we found a way. 😊👌🏻 Now you will get the EXACT same taste and texture from our chicken burger, in bite size pieces. Very addictive, limited portions daily. 😃👌🏻

(2) Hammee’s mashed potatoes: When I was a kid, I loved the KFC mashed potatoes. ❤️ I love it so much I would ask for extra gravy and drink it on its own. 🤪 Unfortunately, through the years it seems they have changed the recipe for the gravy, it’s not the same anymore. I’ve been trying to replicate their gravy at home with no luck. ❌ Even trying every copycat recipe on the internet, but they just taste different. But now I discovered the secret, I think I got it. 👍🏻 I could replicate the exact taste and maybe even better. I make my gravy with beef bones and innards, simmered till the beef fat emulsified into the texture that I need. End result, for me the best gravy for mash potatoes ever. 🙏🏻 You guys have to try this one, relive the taste of my childhood. Lick up every drop of that delicious gravy on your mash, it’s the real deal. Long live Colonel Sanders. 🙏🏻
