Just sharing my journey of health wellness and healing! I have Hashimotos, hypo-thyroid and a celiac hubby.

Afternoon “pick me up” and beautiful weather! Love little moments like this

Brewed coffee, canned coconut milk and a touch of maple

Paleo cream chicken! My veggies were made in the air fryer ... so quick and easy .

When I need a “cheat” I still do it within the boundaries of paleo when I’m committed to healing. This is a strawberry smoothie that’s way too much sugar and I didn’t put greens in it but it’s better to allow clean eating cheats rather than going outside of Whole Foods and especially need that kind of grace when I have gotten really far off track

Yummy dinner for this week! Zucchini and squash noodles, grass fed ground beef, “vodka sauce” made with simply organic Aldi Mariana sauce (yes, it’s paleo and affordable!) and cannned coconut milk

Easy lunch with paleo mayo, avocado, , ham and carrots

This is called left overs hash... just dump left overs into a bowl 😂 My “snack” also known as second dinner. Got to keep that milk supply up 😉

Whew .... I have been lazy cooking since the baby came and I’m adjusting to 100% paleo life and batch cooking where I can. Tonight I made lettuce wraps, which I have made before, but the sauce I tried took them to a new level!

Sauce:
1/3 cup coconut aminos (healthy substitute for soy sauce)
1 tablespoon of black strap molasses
Teaspoon of almond butter
1/4 teaspoon ginger
1 tablespoon onion powder
1/2 tablespoon garlic
1/2 tablespoon sea salt
2 teaspoons apple cider vinegar
2 teaspoons avocado or olive oil
I also added 1/4 teaspoon of tapioca to thicken but it’s not necessary. I let it chill I’m the fridge while I cooked the rest

Ground Bison
Diced veggies - onion, carrots, zucchini, squash
Also topped with avocado
Green beans in the air fryer for a side

This was my first journey with AIP. After my first pregnancy my body just didn’t want to get back on track. I was gluten free and had cut out a few other foods on and off for about 4 years prior. The worst part was the mile long list of symptoms that almost all went away or majorly minimized within 7 months (plus down 70lbs with no working out)!! Many symptoms (like anxiety) I didn’t even know were connected to all this! I am so thankful for the Hashimoto's 411 group for all the knowledge I received that no doctor would tell me my entire life! Yes, that’s right, my whole life... I’ve had hypo thyroid since I was at least 8 which means hashimotos was active before that. I was so desperate I didn’t care what kind of discipline it took! Finally there was something that could help!

I was on it for almost 2 years which was probably longer than I should have gone without reintroducing food but I didn’t want to stop feeling good. A little over two years ago my father began to fall ill and around the same time I started working a job from home with my 2 year old son home full time. It was hard to stay on and little by little over a 3 month period I got off track. Ever since I have tried to get back on track 100% but it seemed to be harder each time. Before I got pregnant last year I was on track for about 3 months then was sick for my entire pregnancy... I’m choosing to do Paleo to start right now because I feel like it’s what I can commit to. I may not see the same results but it’s a step in the right direction!

I had gotten even bigger and more ill than I am
I’m the left picture but it’s the only one I have around that time.

Hello! It’s been a while... pregnancy has not been nice to my body and neither have I! Now that I’m past my “4th trimester” I’m looking to slowly bring my health and body back around. My kids need a healthy momma, I need a healthy body and, as hard as it is sometimes, feeling good is worth the effort it takes! I look forward to sharing this journey with you the best this tired achy mama can!

I’ve been trying out recipes that would be easy to freeze for when baby comes and Oh My Goodness this one is SO good!!! I’ve been craving white potatoes like crazy so trying to find ways to eat them but not completely unhealthy. This is a Shrimp Potato soup and I seriously just read a bunch of recipes and did what I wanted lol

>I first cooked potatoes in the IP and mashed them (I left skins on because we all like them)
>Cook bacon and chop
>Sautéed and puréed onion in bacon grease (purée is only necessary if you have onion haters)
>Then I added these items, mixed & cooked in for 4 min:
-Broth of any variety
-Can of coconut milk or cream
-Shrimp
-Cooked onions and bacon
-Onion Powder
-Garlic powder (could sauté fresh with onions)
-Sea Salt
-Pepper

It’s been a while!!! I was so sick at the beginning of this pregnancy and then so tired and they crossed over but I’m pushing myself to get back on my normal eating. I also got an air fryer and I love!!! It comes out similar to my roasted recipes without heating the oven or I can do two at once! Happy eating 😁

You can have noodles on Paleo/Aip! These are sweet potato noodles. I got them at an Asian market but you can also get them on amazon. They soak up liquid so it’s perfect to sneak in bone broth!

I used these seasoning:
Coconut Aminos
Ginger
Garlic
Onion powder
Fish Sauce

Steep 2 bags of dandelion tea
Add aip approved coconut milk (I use Aroy D canned it’s thicker)
Small amount of pure maple syrup
Real Vanilla (no alcohol for strict aip, optional)

Cheers 😁

Y’all know that song “a baby changes everything” .... well I have a new version ..”an onion changes everything”
But seriously! Just grilled onion, okra and spinach! Super easy add some protein .

I feel like soups are winter’s fool proof easy and healthy way of survival and it’s sad to see that go but grilling is it’s replacement 😁😉happy spring

Making a little treat for after school! I like to make this when I’m going somewhere I won’t be able to eat because it keeps me full!

💜Avocado
💜Frozen strawberries (sub any frozen fruit I get mine from Costco)
💜Grass Fed Collagen or any other powdered goodies
💜 I use half canned coconut milk (aroy-d) and half coconut water to make it thinner. If you are using homemade milk or carton it’s thin enough already

***if you are AIP or paleo make sure you get all items with approved ingredients

BLEND AND ENJOY!
