ish that was served at every meal. It was quickly a family favorite. We had no idea what was in it, all we knew was that it was fabulous. We craved that beef when we returned home. So, I gave it the old college try and perfected a recipe of my own. And seriously, it is even better than what we had in Mexico. It is still a family favorite today. Fast forward to our trip to Ft. Lauderdale, FL. Riding the water taxi we heard story after story of someone who followed a dream, worked hard, and realized success. Call it hokey, but something sparked in me. What am I really good at that might be of interest to others? Cooking. What can I do when I'm not at my day job? Cook. So I was off and cooking! The folks at the day job were more than happy to be my test market - BBQ Beef one day, Caribbean Beef the next. Both recipes were an astounding success. And then it hit me. If I am going to actually sell these bowls of wonderfulness to people, I will probably have to make sure I follow all the appropriate rules. And who knows the rules? My Samantha. That dreaded teenaged job in fast food left her with not only a great work ethic, but also with her ServSafe Certification. She is my food police - making sure I know all the rules! Amy Floyd is the married mother of two living in Grand Rapids, MI. She and her family - husband Tom, daughter Samantha, and son Gavin - are avid travelers. Looking to experience the culture of locals, they steer clear of touristy activities - preferring the open air ride in the rusty Jeep leaving the tourist traps behind. While away at college, Food Network was Samantha's study buddy. She found their cooking, cake decorating, and fancy ingredients fascinating. Next thing you know, Samantha was making layer cakes with fondant and all the trimmings. Now graduated, Samantha continues with her love of baking. And now, also enjoys being her mother's food police.
