Why Butternut Squash?
💪🏽 It’s good for your immunity. Like other orange-colored fruits and vegetables, butternut squash is full of beta-carotene and alpha-carotene. Your body converts them to vitamin A, which is important for your immune system.
👁: It’s excellent for your eyes. Butternut squash has lutein and zeaxanthin, often found in yellow fruits and vegetables as well as eggs. Along with beta-carotene and vitamin A, these protect your eyes from UV rays .

Today in class we discussed all about the benefits of phytonutrients! There is a variety of phytonutrients (or phytochemicals) that support human health, and their presence in plants affect the color of fruits and veggies. Why eat the rainbow? And I’m not referring to skittles 😜!
Phytonutrients in veggies and fruits:
1) keep us healthy
2) maintain a healthy weight
3) fight off diseases and bacteria
It has been estimated that up to 4,000 phytonutrients exist, so in order to get all the nutrients our bodies need, it is important to eat a colorful variety of fruits and vegetables to meet the daily recommendation.
Lillysprouts Wellness chefs had a ball today making delicious chicken skewers with tons of phytonutrients! Nice work!

Cooking class in action! If you have kids at home, we think it's important to get them cooking ASAP! Sound crazy? While it may try your patience at times, cooking with kids has loads of benefits that carry way beyond the kitchen. It helps builds self-esteem, teaches them the importance of following directions, and (hopefully!) puts them on the path to a lifetime of healthier eating habits. Plus, having involvement in what happens at mealtime can be a powerful tool in overcoming picky eating—something we parents and teachers all face at some point.
In this breakfast series, our students learned how to make healthy French Toast and One eyed Jacks! We learned all about the benefits of eggs to start out our mornings!
