Catered a 4-course Dinner for a lovely group from Nashville, Tennessee.
Beetroot & Hot-smoked Salmon Risotto, Lamb Rump, Cranachan (of sorts!) then a Cheeseboard.
Monkfish Tails prepared, seasoned and ready to be baked. Wonderfully versatile fish.
Roasted Monkfish, Parsnip Puree, Baby Beetroot and Salsa Verde followed by Rump of Scotch Lamb, Haggis, roasted Jersey Royals, steamed Char Sum, Honey-glazed Carrots and Lamb Jus

This main course featured Honey & Szechuan Pepper glazed Duck Breast, with Sautéed Oyster Mushrooms, Rice Noodles, Raw Carrot, steamed Pak Choi and a Hot & Sour Broth with Chilli, Brown Sugar, Soy, Garlic, Miso, Lemongrass, Ginger and fresh Coriander
Another dish from the weekend catering stint. This is a lovely grilled Seabass starter, served with braised Fennel, Celeriac and Lemon-Caper Dressing.
Friday night at and there were some lovely Lamb Cutlets on the menu for this week's Whisky Group. It's been a busy weekend of catering so watch out for more photos!......
Had the absolute pleasure of dining at the in Fordyce at the weekend. Lovely menu, fresh ingredients, everything homemade, great flavours and super experience in one of the garden cabins. Very friendly and efficient service and a great visit all round. This was my Halibut Main Course. Definitely worth a visit!!

Just three courses this time but some cracking Cod Loin in Serrano Ham, Scotch Beef Fillet with British Asparagus and Roasted Garlic Jus then a tasty Trio of Desserts. Very enjoyable!
A day for some nice new stuff!! Received two parcels today for One from with my due diligence system and Membership Certificate and another from with some new PDS Chef Jackets, Aprons and a nice soft shell Jacket.

Three of the four courses from tonight's catering for a lovely international group of 10 at
Duck Breast, Sirloin, Pannacotta and a Cheese Board. Canapes were served beforehand too.

This ought to be good! Some beautiful thick Cod Loin, roasted Baby Potatoes with Garlic and Thyme, Pak Choi (steamed) and a nice mustard sauce. Yes please!
Just rejoined this excellent organisation! This is the only specialist organisation for independent Caterers in the UK and they provide support, resources, training and assist with legal compliance.
I love everything about this PDS dish from a couple of years back. Slow cooked and heavily spiced Lamb shoulder which just falls apart, the hit of mustard and Fresh Herbs from the poached Lamb Loin, the rich Dauphinoise, roasted Carrots and a Lamb Jus to bring it all together.
Just a plateful to enjoy.
A nice plate of food doesn't have to have a huge number of components. Many years ago, I plated a starter with 21 different elements (it was delicious!) but this just has 5. Simplicity is often the key and it's not always easy to achieve!

Some colourful and flavourful food tonight with some Curried Monkfish, action-packed Lamb for main and a Whisky and Fruit Combination for dessert.

The wind and hail outside didn't dampen the spirits!! Great evening all round!!
One of my absolute favourite cuts of meat - Lamb Rump. Seared in a pan then roasted for 25 mins, rested and sliced. Served this time with Chipotle, Apricot and Coriander Buckwheat, roasted Baby Tomatoes and Corn with Garlic Butter. The flavour and tenderness of the meat is just superb.
The weather is pretty disappointing for this time of year, but it does lead to thoughts of delicious Main Courses like this recent one for a family celebration near Fochabers. Slow-cooked Steak & Ale Pie, buttery Mash and Steamed Cabbage. Comfort food at its best.
Just wanted to post a picture of some incredible Red Potatoes, cooking and colouring away in a pan of foaming butter, thyme, garlic, salt and pepper. They were about to be accompanied by some vegetable stock and then cooked in the oven until soft, buttery and full of flavour.
Didn't manage quite so well with the photography but did capture the Canapes and starter from a 4-course celebratory dinner last night for long-standing clients. Great to cater for them again after such a long hiatus!!
